Orange Jalapeno Pork Chops and Queso Broccoli 4 Points

 

 

  I'm really not a big fan of pork.....well besides bacon, but these Orange Jalapeno Pork chops are so fresh, sweet and slightly spicy, the flavors just work beautifully together. The only difference I did was I used a TBS of monkfruit sweetener instead of a half cup of honey. You could of course add more, but I like it slightly on the spicier side. I also didn't strain the sauce, we liked all the bits that got nice and cooked in the cast iron skillet. 

  Served with steamed broccoli and I put 2 tbs of salsa con queso on mine, along with some garlic powder. And cantaloupe of course, we like that around here lol.

Kroger's Marinated Blackend Salmon, Scalloped Potatoes, Lime Pinto Bean and Corn Salad

   We've had these marinated garlic black pepper frozen salmon filets for a few months in the freezer, so I thought we'd use them up. I didn't scan them on the WW app until I already defrosted them.....9 points!!! For a little piece of salmon! I can't find what brand they are right now since I made this dinner like a month ago. Don't get me wrong, they were DELICIOUS, but I could of easily made the same marinade for like 1 point. Oh well, now we know not to buy those again.

  I served them up with scalloped potatoes, cantaloupe, and this delicious pinto bean and corn salad with a lime crema. Yum! The recipe calls for black beans, but my husband doesn't care for them, so I subbed in pinto. What I did differently was I wanted more of a lime crema then just a lime sauce, so I doubled the spices and mixed in some non fat greek yogurt until I got the consistency that I wanted.

Spaghetti Squash Alfredo with Italian Cheese Stuffed Chicken 5 Points

 

This recipe was saved from a WW Facebook group awhile ago, and I can't find which one it was! The only thing I did differently was I seasoned the squash with garlic and Italian seasonings. Also we had a side salad with 0 point dressing.

Spaghetti Squash Alfredo and Italian Stuffed Chicken with a tossed salad.
 
Spaghetti Squash Alfredo
Serves 4 (1 point per serving on blue)

INGREDIENTS
* 1 spaghetti squash
*  cooking spray
* 1/2 tablespoon garlic salt
* 4 laughing cow cheese wedges garlic and herb

INSTRUCTIONS
* Slice spaghetti squash in half, longwise. Remove the seeds and the core�
* Spray with cooking spray and sprinkle with the garlic salt�
* Place, cut side down, on a microwave safe dish and take a fork and carefully fork up the skin. Microwave for 8-10 minutes, until the skin is slightly soft to the touch�
* Or bake in the oven on a baking tray, cut side down, at 400 degrees for 45 minutes to an hour�
* Once cooked, fork up the insides of the squash �
* Add the laughing cow cheese wedges and mix until completely melted, 2 per each side of the squash�

Stuffed Italian Chicken
Serves 4 (4 points per breast on blue)

Preheat oven 350 degrees
4 chicken breasts
1 egg, beaten
3/4 cup Ragu Simply Roasted Garlic Pasta Sauce (3 points)
1 3/4 cup Low Fat Mozzarella Cheese,  (reserve 3/4 cup) (14 points)
2 Tbsp of Italian Seasoning
1/2 tsp of Minced Garlic


Mix 1 cup of cheese with seasoning, garlic and beaten egg, set aside.
Create a pocket in each breast, fill each pocket with cheese mixture
place in casserole dish, S&P bake 35 minutes.
After 35 minutes, spoon sauce over the breasts and top each with equal amounts of reserved cheese.
Bake an additional 5 minutes to melt cheese and heat sauce.
Be sure your chicken is 165 degrees internal temp, remove from oven, let rest 8-10 minutes

Orange Ginger Chicken, Sriracha Cauli Fried Rice and Wonton Soup 4 Points

 This was a fun dinner! I used Skinnytaste's wonton soup recipe, the wontons were from Costco. Then I marinated 2 chicken breasts that I had cut up in half a bottle of G Hughes Sugar Free Orange Ginger Marinade. For the rice I cooked 1 cup brown rice and 1 pouch of riced cauliflower. I sauteed them together with frozen edamame and fresh shredded carrots....and tossed it with soy sauce, a tsp of sesame oil, garlic and sriracha. 

- Wonton Soup 2 points

- Orange Ginger Chicken 0 points

Lightened Up Blackend Chicken Alfredo with a Side Salad 6 Points

 Delicious! The noodles do have kind of a "diety" flavor, but the texture is great and we do enjoy them for a low point noodle, I get them at Meijers. I cut up 2 chicken breasts and COVERED them with Kinders Blackened Seasoning, then just cooked them in a cast iron skillet until they were done, like 12 minutes or so. The noodles take 3 minutes to cook. The salad is just a garden salad kit, cherry tomatoes, pepper and some 0 point Walden Farms Chipotle Ranch dressing.

- 1 1/2 cups noodles are 3 points

- 1/3 cup Alfredo is 3 points

- Chicken is 0 points

- Salad is 0 points. 





Meatloaf with Homestyle Cauli-tator Mash 8 Points

 This was delicious! Literally, this was the FIRST TIME that my meatloaf actually sliced, rather then just crumbled. Although the ketchup topping looks streaky and weird lol.

I followed the meatloaf recipe exactly as written. 5.25 ounces is 4 points. The serving in the picture is a lot bigger because it's my husbands plate and he's not really following WW.

The only thing I did differently for the cauli-tator mash was to add a bunch of garlic. The whole family loved it. 3/4 cup is 4 points.

 


 


Almost White Chicken Chili and a Quesadilla 4 Points

   So I wanted to make a white chicken chili for dinner, and we had everything BUT the green salsa. So I sort of improvised. I used this recipe by Slender Kitchen, but instead of green salsa I used about 2 cups of green enchilada sauce. I also used about 6 oz of 1/3 fat cream cheese and a can of fire roasted tomatoes. The recipe as written is 0 points, but with my changes it's about 3 points for 1.25 cups. My husband and I also had a quesadilla using Ole Extreme Wellness tortillas (1 point) and 1/4 of fat free cheddar (0 points). It honestly could of used more cheese, but I was dipping the quesadilla in the soup so it didn't matter. Super filling and delicious!

  I of course forgot to take a picture of my plate, this is my sons plate, He had a regular tortilla, regular cheddar and sour cream on top. I topped mine with greek yogurt and Cholula. Oh! We also sprinkled a little shredded cheese on the top.




Blackened Shake and Bake Chicken, Roasted Broccoli and Potatoes with a Side Salad. 5 Points

  I had a little trouble figuring the point values for this dinner, so it's kind of an estimate.

  I cut up 3 chicken breasts into semi nugget shape since I wanted to try cooking them in the air fryer and I wanted to make sure they'd cook all the way. I marinated the chicken in pickle juice and ranch seasoning for about 4 hours. Then covered them in Shake and Bake seasoning that I added Kinder's Blackened Seasoning to. I air fried them at 400 for 5 minutes each side, and they were slightly dry so I could of done 8-9 minutes. According to the WW app, 1/8 a packet of Shake and Bake chicken is 1 point, so just to be safe I calculated each serving as 2 points.....but I could be totally wrong!

  I chopped up a head of broccoli and about 5 yellow potatoes, and when I put that in the recipe builder it came out to 3 points for the potatoes for 6 servings. I tossed the broccoli and potatoes in cooking spray, Kinder's Master Salt and some black pepper. I roasted them for about a half hour in a 400 degree oven.

 For the other sides we had a salad with Walden Farms Chipotle Ranch dressing.....which I won't be buying again. I like that it's 0 points, but it has almost a cola flavor to me, I think I'd rather spend a point or two on something that actually tastes good. But I don't want to waste it so we'll use up the bottle. I also chopped up some cherry tomatoes from my parents garden, but I forgot to take a pic of that. My son and husbands salad also had some leftover bacon crumbled in it. My son and I also had some cantaloupe because it's the best :)





Chicken Enchiladas with Chipotle Sauce, Corn and Pintos & Cheese. 3 Points.

 This was delicious! The only one who didn't like it was my oldest, because for some crazy reason he doesn't like enchiladas. He took a few bites though, and he had lots of the sides and some fruit. 

I used the enchilada sauce recipe from Skinnytaste. I've used Budget Bytes enchilada sauce recipe for YEARS, but it has lots of oil and flour so it's not WW friendly. Honestly I didn't really see any taste difference between these 2 recipes, maaaaaybe the Budget Bytes one had a deeper/richer flavor but the Skinnytaste recipe was just as good.

The enchilada recipe is based on Felicia Keathley's Beef Enchilada recipe. I used reduced fat cheese instead of fat free, so the points are higher but the reduced fat cheese melts better. I used Ole Extreme Wellness tortillas also. It works out to 3 points per enchilada. You can top it with greek yogurt, salsa, hot sauce, onions, and jalapenos all for 0 points!

I served it with fat free refried beans topped with fat free cheese for 0 points. And of course, corn is 0 points also.

Mississippi Pulled Chicken, Brown Rice and Steamed Broccoli 5 Points on Blue


 I absolutely love Mississippi Pulled Chicken/Beef. I love the hint of spicy from the peppers and the gravy mixture is just so savory.....it's the best. I cooked up a batch of it in the Instant Pot for lunches throughout the week, I don't usually use my Instant Pot because half the time I never get it right and get "burn" notices. But this recipe worked perfect. 

I cooked 2 cups brown rice and chopped up a head of broccoli for the week. When I wanted lunch, I just tossed some broccoli in a bowl with a little water for a few minutes until steamed. I served it with a 1/2 cup rice and mixed it all together, perfection.

- 5oz Mississippi Pulled Chicken. 2 points.

- 1/2 cup cooked brown rice. 3 points.

- About 3/4 cup broccoli. 0 points.

Sloppy Joe Casserole and Roasted Veggies

 This casserole was just ok, I felt it was kind of dry. But I did make the mistake of buying jumbo biscuits instead of regular so that might of contributed to the dryness. That also meant that this did end up being more points. It's probably about 7 here, honestly after I messed it up I just went with 7 points.

The roasted veggies were great, but I love love roasted veggies. I used zucchini, bell pepper, onions, garlic, potatoes, carrots, and cauliflower. I also threw in 2 chicken apple sausages that I needed to use up. I didn't use any oil, I just sprayed with cooking spray and tossed to coat with the spices.

I'd say this is an 8 point dinner, there weren't many sausages....so I figured there was only 1 point worth per serving. The picture is of my sons plate, and he had french fries, I forgot to get one of my plate!







5 Point Lunch Including Starbucks

I get up at 5am every day to get my oldest ready for school. Normally I go back to bed at like 7am after he's all dropped off and I get home. But the past few days I've started to immediately come home and go work out on the treadmill for 30-40 minutes. What's happening to me?? Who am I?? No but seriously, it's been nice and I feel better, hopefully I can keep it up.

My youngest, Zach (he's 10) usually wakes up around 6am as we are getting ready, either we are to loud or the dogs are playing and that wakes him up. Since we were up and ready after I worked out, we decided to go to Target! I wanted to find some warm clothes for us, but Target's clothes have not been good lately, Walmart's been having way cuter clothes.....no idea what's happening with that. But I picked up these Ritz Crisp & Thins that are 13 for 2 points, or 18 for 3! We also stopped at Starbucks, which is rare because the only Starbucks near us is inside the Target, no drive thu's nearby unfortunately. I got a venti cold brew with sugar free vanilla and cold foam. I'd never had it before, it's delicious and only 2 points! 

So when we got home I cut up an apple and had this for a lunchy snack thing. Filling and yummy.

- Starbucks Cold Brew with Sugar Free Vanilla and Cold Foam. 2 Points. Could be zero points if you don't get the cold foam.
