Italian Turkey Meatloaf, Cheesy Garlic Cauli Rice, and Air Fried Zucchini

  This wasn't planned, I just used what I had on hand. Italian Turkey Meatloaf, Cheesy Garlic Cauliflower Rice, and Air Fried Zucchini. This is my sons plate and he also had some bread and butter.

  For the turkey meatloaf I used:

- 1 pound ground turkey
- 1/3 cup chopped carrots
- 1/3 cup chopped bell pepper
- 1/2 a white onion
- 3 strips turkey bacon
- 3 tbs minced garlic (we like super garlicky)
- And I seasoned randomly with Kinder's Master Salt, Kinder's Buttery Steak Seasoning, Italian seasoning, pepper, red pepper.


  I air fried 3 pieces of turkey bacon for about 9 minutes at 400....I wanted it super crispy. Then I just combined everything and shaped it into a loaf on a cookie sheet and drizzled with ketchup. I cooked it at 400 for 45 minutes, and it was more then done at 170 degrees. I let it sit for around 20 minutes before I sliced it.

  The air fried zucchini was just 1 zucchini that I chopped and tossed with cooking spray, Kinder's Master Salt and some pepper. I air fried at 400 for 7 minutes, shook them, then air fried for another 5 minutes.

  The Cheesy Garlic Cauli Rice was just a bag of frozen riced cauliflower that I microwaved for 5 minutes. While it was cooking I heated a pan with a little less then a tbs of butter, then added the rice when it was done. I tossed everything with 1 tbs minced garlic, Kinder's Master Salt, pepper, red pepper, 1 wedge Swiss Laughing Cow Cheese, and then some regular 'ol powdered parm. I cooked it for like 5 minutes just to dry out any remaining moisture and melt the cheeses.

Chipotle Chicken Toastadas with pintos & cheese and Buttery Corn



 

  Random chicken tostadas. I kinda used a couple of recipes, but I kinda just used what I had. They were so good though!

  For the chicken, I just cooked up a pound of ground chicken, then when it was basically cooked through I added a bunch of taco seasoning and maybe 1/4 cup water.

  The sauce topping was not measured but I used: about 1/4 cup low fat mayo, 1/4 cup greek yogurt, Trader Joe's Green Dragon hot sauce, a dash of salt, juice of 1/2 a lime,  1/2 tbs minced garlic, 1 tbs Ms. Dash Chipotle Seasoning

  The slaw topping was 2 cups coleslaw mix (without the dressing), 1 minced jalapeno, 1 diced roma tomato, 1/2 an onion minced, a sprinkling of salt, low fat mayo, Trader Joe's Green Dragon hot sauce, juice of 1/2 a lime, 1/2 tbs minced garlic and like 1/2 tbs Ms. Dash Chipotle Seasoning.

  For the pintos and cheese I just heated a can of fat free refried beans on the stovetop. Then when plated I added a sprinkling of fat free cheese.

  The corn was just steamable corn, then I added a few spritz' of I Can't Believe It's Not Butter, salt/pepper and a sprinkling of garlic.

 The store was actually out of all toastada shells (what??) so I used some Flatout flatbread that I cut in half then toasted in a 400 oven for around 5 minutes for each side.

  So to build the toastadas: I spread Laughing Cow Pepperjack cheese, a bit of the refried beans, chicken mixture, slaw, then sauce. Then a scoop of beans with a sprinkling of cheese, then some corn. Yum!



Italian Smoked Sausage Wraps with Fries



 

    I have no idea what the name of the recipe should be, but I make those sandwiches that have smoked sausage, bell pepper, onion and Italian seasoning....cooked in a little olive oil. Served in a toasted bun with a little provolone cheese.  We were trying to do this a little healthier, so instead of a hoagie roll we had them in low carb spinach tortillas. I also had planned for the cheese to be a Laughing Cow wedge, but my husband wanted some cheddar instead. Oh well, we still saved lots of calories and carbs by substituting a roll for a low carb tortilla lol.

  You just chop up an onion, two bell peppers, and a package of smoked turkey sausage. Heat up a little olive oil and cook the onions for like 2 minutes. Then add the bell peppers, turkey sausage, 2 tbs garlic, salt/pepper, and a bunch of Italian seasoning. I made these quesadilla style and they were delicious!

 For the fries I took two potatoes and chopped them up fry style (julienne?) tossed them in some cooking spray and french fry seasoning then air fried like 18 minutes or until I felt they looked good.

 My sons plate also had some apples and peanut butter with a sprinkling of cinnamon and sugar.

Garlic Butter Salmon, Smoky Sweet Potatoes and Broccoli & Cheese

 


  Easy cheap dinner!

  I basically used this Garlic Butter Salmon recipe by RecipetinEats It's delicious, because who doesn't love garlic, butter, and salmon right?

  I also air fried some sweet potatoes using Budget Bytes Smoky Roasted Sweet Potatoes for like 18 minutes at 400. 

  Lastly, I made broccoli cheese. It's just some frozen broccoli with some salsa con queso lol. Easy but broccoli cheese is the best!

Air Fried Chicken Apple Sausage with Veggies & Broccoli Bean Parm Rice

 

  This was just a random clean out the fridge meal. 

   I chopped up zucchini, broccoli, 1 potato and a package of chicken apple sausage. I then drizzled it with olive oil and seasoned with Kinder's Buttery Steakhouse seasoning, Kinder's Master Salt and pepper. Then I air fried at 380 for about 12 minutes, shaking halfway through. I should have added an onion, but I didn't even think of it!

  The rice was just a package of frozen broccoli rice that I cooked with a pat of butter, Kinder's Buttery Steakhouse seasoning, pepper, red pepper flakes, about a half cup of leftover canned white beans, parm and about a 1/3 cup of reduced fat mozzarella. 

  I also spritzed a little bit of I Can't Believe It's Not Butter spray over everything. This is my sons bowl and he also had some bread and butter with it. 

  Cheap, delicious and filling :)

Air Fried Tofu BBQ Bowls

 


    This was kind of a clean out the fridge meal. I marinated some tofu in sugar free bbq sauce, then tossed it in cornstarch/garlic/smoked paprika/salt/pepper and air fried at 380 for like 10 minutes? I don't remember how long. Then I roasted some sweet potatoes seasoned with brown sugar Truvia/smoked paprika/garlic/cayenne/salt/pepper. I also charred up some frozen corn and zucchini together in a cast iron skillet.

  The bowl consisted of spring mix, pinto beans, roasted sweet potatoes, charred corn/zucchini mixture, tofu, red onion, and avocado. Then I drizzled it with sugar free bbq sauce. Yum!

  I really hate that I messed up the English muffins....as you can see each sandwich has either two tops or two bottoms. Sigh. 

  These were so good and so low calorie. The recipe calls for chicken thighs, but the stores have been out of chicken for weeks now....I was lucky to snag some breasts the other day though. So I pounded a chicken breast thin, coated it with seasoning and air fried it at 380 for around 15 minutes. The slaw is just a mixture of coleslaw mix, Bolthouse Ranch and a drizzle of Mikes Hot Honey. That bottle of hot honey was $8 freaking dollars, I should of just mixed up some honey and red pepper flakes. Oh well. Then the sauce is a mixture of low fat mayo, pickle juice and Frank's hot sauce. The recipe calls for Truff's hot sauce.....but that is like $17 a bottle! Eep. 

  I also air fried 2 zucchini's with the same seasoning that I used on the chicken because it was already out and I was to lazy to decide on a new seasoning combo. 

  Delicious and I'll be making these again.

  This was phenomenal. There was so much flavor going on, and it was super quick and easy to make. Plus it's pretty low calorie!  I served it with a side salad. The flatbread was a little floppy, but it wasn't floppy enough to be a big deal. I'll definitely be making this again!

   This was really good! The only thing I did differently was that I used regular 2% milk instead of almond since my son is allergic. I also used Carba-Nada pasta which is pretty good....it's not the most amazing tasting pasta, but it'll do. 

   I served it with a side of blackened chicken tenders. I just coated some tenders in Kinder's Blackened Seasoning and air fried at 380 for like 15 minutes or so.

Sweet & Spicy Tempeh Bowls

 I like using tempeh, it has a nice chewy texture and it's just a nice change every once in awhile. You gotta steam it for 10 minutes before you cook it though, it takes away any of bitter flavor it may have. I used air fried potatoes instead of polenta because I really needed to use up a ton of potatoes.

  I like to keep frozen salmon on hand because it defrosts quickly and we all love it. I used this Sesame Glazed Salmon and Green Beans recipe from Budget Bytes, and it was delicious. The only thing I did differently was I doubled the sauce, because I tossed in some cauliflower rice with the green beans. 

  I air fried some potatoes with cooking spray and Kinder's Blackened Seasoning because I accidentally bought 10 pounds of potatoes, so we'll be having potatoes daily here for a couple of weeks lol.
