One Pot Creamy Pesto Chicken Pasta

     Okay it's not a pretty picture but it's delicious! I used to make a pesto chicken dish similar years ago that everyone loved. It was basically cooked diced chicken with cooked pasta, tossed with a jar of pesto and sour cream with a few seasonings. I don't remember the exact ratios but I'm sure I saved it somewhere. We also had a side of green beans that I forgot to grab a picture of. 

    I loved this, my son loved this. My husband said "I don't like the spinach" We can add a little splash of veggies in this heavy dish lol. Next time I'll use broccoli which will be even better.

No Peek Chicken

    I've never made no peek chicken but I've always seen it throughout all the cooking blogs and Pinterest. On one hand, son loves Budget Bytes One Pan Chicken and Rice  so I thought he'd like this. On the other hand, I wasn't sure about it because it's all processed ingredients and I usually don't make super processed dinners like that lol. Not to say I cook all organic and stuff, but every ingredient but the chicken is processed, and that never usually tastes that great. 

    We didn't care for it, my son did like the rice though. The chicken was dry, and everything was so salty. Oh well not every recipe will be a hit!


   The veggies are a Thai chicken broccoli salad that I made, I'll make a post about it. It's okay, the flavor is really light.

Air Fryer Pickle Juice Chicken with Baked Potatoes and Green Beans

    It seems like all the chicken I make lately is marinated in pickle juice! It just adds so much flavor and juiciness. I tried a new recipe this time, and it's delicious! Not very low calorie though since there is mayo on it lol. But worth it. The green beans were just cooked/steamed in a skillet in 1/4 cup veggie stock for 3 minutes, then tossed in 1 tbs butter with salt and pepper. I also added a sprinkling of "power seeds" on top. It's just a mixture of hemp, chia etc. The baked potato was just microwaved and topped with some butter, cheese, salt/pepper/garlic, and sour cream.

 It was super fast too!

High Fiber Gnocchi Skillet

     Delicious! I used ground chicken because I wanted to make it lighter, but of course it would be tastier with beef. I didn't even know that you could buy cauliflower gnocchi! Next time I'll make a veggie side, but this was kinda spur of the moment. I also used mozzarella because we already have a huge bag from making homemade pizza, I added an onion while cooking the meat, and I seasoned the meat with garlic and Italian seasoning. Definitely in our rotation!
