Weight Watchers Chicken Tikka Masala

Served over brown rice. This was pretty good, it's definitely better with all the full fat milks/yogurts, but it was decent for a low calorie recipe. Not sure if I'd make it again, I might try to find a different one. I did just throw everything in the Instant Pot because the baby isn't wanting to be put down right now, so maybe that's where I went wrong.

Built Bar Sour Puff Pink Lemonade Squeeze Review

I admit, the first nanosecond of the first bite was pretty good, I tasted sweet strawberry. Then it all went terribly wrong. Um, these are horrendous. Like one of the worst tasting things I've ever tasted....they taste like vomit. And the vomit flavor doesn't leave your mouth until you drink something, and even then the memory haunts you. When Casey's gas station first opened by us, I went and got a horchata latte. It was hot when it was dispensed, but I figured maybe it was like how when you order iced tea, lots of time it comes out warm and you dispense it over ice. No....it was not supposed to be hot. It was so spoiled....that was the first time I ever tasted vomit flavor from food, and this brought back canon event memories.

I'm not a picky person at all, even if I don't love something I'm okay with "fine" food. I like to just make bowls of random food and eat the mixture when I don't want to cook, my husband says it's weird but I'm fine with it. But this is so so so so gross. I had my parents try it, and they thought it was awful too. My son wants to prank his friends with it. 

I love Built Bars and at least this was a freebie, I'd be so disappointed if I actually paid for this.

This recipe is from Makayla Thomas, it's lower calorie high fiber etc. I really liked it, but my husband did not. He didn't like the pita bread on the outside since it was kinda bland....which I get. I served it with a side salad just because I needed to use it up. They were actually super filling gorditas! I would make this again for me but probably not for the fam.

Terrible picture lol. I made this with all low fat/fat free ingredients for more of a low calorie option. It tasted good but it was super duper thick, like you couldn't use it as a dip so I used it as burrito filling. Next time I would probably only add 1 can of refried beans and mixed in either salsa or queso to make it more dippable. I did add cilantro because we had some. 

Actually now that I'm re-reading the recipe, it only calls for 1 can of refried beans.....whoops. I was looking at a few different recipes to try so I must have gotten it mixed up.

Zero Sugar Apple Pie WW Cake

Ingredients:
- 3 eggs
- 1 box zero sugar cake mix
- 1 can sugar free pie filling

Mix everything together in a 9x13 pan and bake at 350 for 35-40 minutes. I sprinkled cinnamon all over the top too.

It's really good, not too sweet and would be fun with some whipped cream or cool whip topping. I think it works out to 4 points if you sliced it into 12 bars.

Caesar Protein Veggie Pasta


   This is super good! 

I just used:
- 1 rotisserie chicken
- 1 bag of mini cucumbers
- 1 pint of cherry tomatoes
- 1 box Barilla protein pasta
- 1 bottle Bolthouse caesar dressing
- 1/4 red onion
- Juice of 1 lemon
- salt, pepper, garlic powder, dry dill

Not pictured:
- Chopped lettuce

I just chopped and mixed everything together. Next time for a higher protein/lower calorie option I might try half a bottle of Bolthouse with half greek yogurt and extra seasoning to make up for the loss of flavor. Bolthouse is already low calorie but more protein is always good. The lettuce I'm adding per bowl so it doesn't get soggy.

I love love love this and need this in my fridge at all times now.

   This wasn't very good, it just tastes too processed with the BWW sauce. I knew it would probably taste too processed but I was hoping with all the rest of the ingredients it would be okay. I did roast up 3 bell peppers and added in some spinach to add in veggies. But I won't be making this again.

UPDATE:

    This actually tasted amazing the next day as leftovers, I guess it just needed a little time to marinate, and we will be making it again.

High Protein Chicken Caesar Pasta Salad


  This was SO GOOD. I used Banza chickpea pasta for the extra protein, and you really can't even tell when it's mixed with the rest of the ingredients. The caesar dressing is also delicious, I'm picky with caesar and I'll definitely be making it again! Everyone loved it. I did just eyeball the ingredients for the dressing but it's very forgiving. Oh I also used a rotisserie chicken to make it even easier.

   I forgot to take a picture of them but I wanted to save the recipe for when I'm looking for dinners next time. This was really good and we all loved it. The only change I made was I didn't mix everything together, I spread the Laughing Cow cheese onto the Flatout, then layered the ingredients.

Easy Fish Tacos with Sriracha Lime Crema

This wasn't a Weight Watcher recipe, but I adapted it to be WW. I seasoned some fish and cooked it for 12 minutes at 400 in the oven. I made a sriracha lime crema with a 1/2 cup nonfat greek yogurt, half a lime, a tbs minced garlic and a few squirts of sriracha. 

  The tacos themselves consisted of tilapia, avocado, salsa, shredded cabbage, crema. On my husbands and kids tacos I added cotija cheese just because we had it leftover. The picture has just regular street taco tortillas. Mine was WW and I used thin corn tortillas that were 1 point each. So each taco ended up being 1 point, but I sliced 1/4 avocado and split it between the 2 tacos for 1 point. So for all 3 tacos it was 3 points. I wasn't super hungry or I would have more, since each taco is only 1 point I could have several. Or I could make a side of mexican cauliflower rice, or fat free refried beans!

Garlic Butter Chicken with Zucchini and Corn

  I know I say most of the recipes I post are super good, it's because I'm picky on what I think my family would like. Me.....I'll eat almost anything and love it. Although some weird sort of giant clam abalone looking thing was served once (I forgot what it was obviously) and I couldn't bring myself to try it.....I haven't tried clams either. People have said the texture is "snot like" and I just cant imagine slurping a big snot chunk lol.  Anyway, that has nothing to do with this dinner. This dish was delicious! I did make it Weight Watcher friendly by cooking it in chicken broth and a lil I Can't Believe It's Not Butter, and I admit the ICBINT tastes a lil weird and it would taste better with butter, but I gotta lose pounds okay. I served it with instant mashed potatoes for the rest of my family, I just ate it as is. Yum!

Pesto Zucchini Noodles with Chicken Sausage

  This was really yummy. I did make a few changes though! :)

  First I sauteed half an onion, red pepper flakes, garlic and the chopped chicken sausages in a little bit of olive oil. Then I added 3 spiralized zucchini (the store had no summer squash) straight to the pan and seasoned it with pepper, a tiny bit of salt and the whole jar of pesto. Then I stirred it and let it sit for a minute to warm up the zucchini before I took it off the heat. 

  I spiralized most of the zucchini, but I didn't know what to do with the ends so I just chopped them up. It's not as pretty as the recipe picture though lol.

  For my son and husband I made some crescent rolls, but I ate it as is and it was super filling with the sausages. I'll definitely make it again.

  I only spiralized a little bit of my finger lol.

 Italian Turkey Stuffed Portobello Mushroom Caps

 So the flavor is pretty good, but the execution was a fail. The recipe says to bake the mushroom caps before you fill them (it's like stuffed bell peppers), but my mushroom caps turned flat.....I mean I could try and top them and awkwardly eat them, but instead I just chopped them up. I then added them to the turkey mixture, put it in a pan, then topped it with colby jack and cooked it at 375 for 10 minutes. 

We also had a side of roasted zucchini, and my husband had leftover macaroni salad. Definitely a fail :(
