  This was delicious, but I added some cajun seasoning and it ended up too salty tasting even though I didn't add any additional salt. Oh well, next time I'll just add a bit less cajun seasoning.

Ham & Cheese Sliders with Broccoli Cheddar Chicken Salad

  We usually make these sliders for holidays, they are so good. But it's spring break and I thought it would be a great snack to have on hand for my teenager so I don't have to cook so much lol. 

  I paired it with this chicken salad which was AMAZING because that ranch is so incredibly flavorful. I would use a little less milk though since the ranch was a little runny. For the chicken I had some chicken breasts that I just threw a bunch of seasonings on and air fried. Definitely double this recipe because it doesn't make to much.

   This was good but there was a few issues. First, the recipe for the pork chops were for thick bone in pork chops. I ordered them for grocery pickup, but they substituted with the thin boneless pork chops. So I followed the recipe as close as possible and used a meat thermometer....but they were still kinda over cooked. I've never been able to make a juicy thin cut pork chop. The honey mustard sauce was excellent though!

  The second issue I ran into was the potatoes. I was making "Crispy Smashed Potatoes in the Air Fryer". Where you boil them, then mush them down with a cup/bowl/fork whatever, then air fry. Every potato I smashed just fell apart. I tried lightly smashing and smashing more forceful, they all fell apart. So I ended up just adding some butter, garlic, salt, pepper and milk and mashing them. They tasted good but my son really wanted to try the air fryer version.

  I can't even think of the word potatoes without thinking of Sam.





  The third issue really isn't an issue, but personal taste. The salad was just a Taylor Farms Mediterranean Salad Kit. I try to like these flavors, I really do. But I really don't like feta cheese. I WISH I did, because it's higher protein and lower calorie. It was on sale so I thought we'd get it, but I don't think we'd get it again. I do love Taylor Farms salad kits though!

  The top plate was for my husband and I, the bottom for my son since he's a teenager and eats a ton lol.

  This was a mish mash of recipes and what we had on hand. For the breading I used the rest of the panko I had, jalapeno and spicy pork rinds, chili lime seasoning and chipotle seasoning. I just smashed them up all together then air fried the tilapia at like 370 for about 8 minutes. 

  The Cucumber Avocado Salsa was just 1 chopped cucumber, 2 small avocados, cilantro, and a few leftover tbs of red onion. Mixed with sea salt, lime juice and cumin. My son swears he hates avocado, but I didn't tell him what was in it and he ate it happily lol.

  The Mac & Cheese  was just Annie's Shells & White Cheddar, and while making the sauce I added minced garlic and red pepper flakes. 

  The salad was just a romaine heart chopped up with pepper and a carrot. The dressing was Skinny Girl Poppyseed dressing which wasn't very good. I haven't been able to find ANY salad dressings I like lately, they all taste too processed. I think I need to start making my own.

Turkey Vegetable Enchilada Casserole

  I've made this before and it's super good. What I did different was that I doubled the sauce and tortilla recipe (I wanted leftovers) added a 1/2 pound ground turkey, and a bag of frozen zucchini. I topped it with sour cream, salsa, pickled jalapenos, onion and cilantro. 

  My son doesn't like enchiladas, so I never actually told him what it was, just that dinner was ready. Later on he told me that he didn't really like the enchiladas lol......I guess he didn't forget the enchilada sauce that I normally make.

One Pot Creamy Cajun Chicken Pasta

I've made this recipe before and it's delicious. The only thing I did differently was I cooked the onions and chicken together with minced garlic and added some cumin to the spice mix. I didn't remove the chicken mixture, I just added the rest of the ingredients. Delicious and very flavorful.

The broccoli was just a bag of steamable broccoli that I mixed with a little butter, garlic, salt/pepper, and lemon juice.

  So I know this isn't very appetizing looking lol, but I was just doing a quick clean out the fridge meal of veggie pesto skillet. I just now realized I forgot to add the zucchini! I knew I was forgetting something.

  I just sautéed up a pound of ground turkey, a yellow bell pepper, a bag of frozen broccoli that I air fried to get the roasted flavor, 1 cup frozen peas, 2 cups fresh spinach, garlic, Italian seasoning, red pepper flakes, parmesan and a small jar of pesto.

Tilapia with Roasted Veggies and Mashed Potatoes 

I used this recipe from KristysKetoLifestyle on Pinterest, it wont let me link to it unfortunately.

1. In a bowl, mix together:
2 Tbsp melted butter
1 tsp minced garlic
1/4 tsp @porkkinggood seasoning salt
juice from 1/2 of a lemon
1/4 cup mayo
1/4 cup shredded Parmesan cheese
1/2 Tbsp dried parsley
1/2 Tbsp dill weed
1/8 tsp cayenne pepper
2. Lay your tilapia filets in a greased, oven safe dish and pat them dry.
3. Top each filet with the mayo mixture.
4. Bake at 400 degrees for 10-15 min or until fish is cooked through.

Then for the veggies I chopped up 1 bunch of asparagus and 1 summer squash. I tossed it with olive oil, salt, pepper, rosemary and garlic and roasted it for 400 degrees for 20 minutes. 

The mashed potatoes were just instant mashed potatoes lol.
