Hello Fresh Street Cart Style Chicken Bowls

When this popped up on my menu I was thinking it was Mexican, I really didn't even pay attention. But it's Middle Eastern inspired and I LOVED it! I so messed it up though lol. I only added 1 of the packages of chicken, I totally forgot we got 2. I also put one of the shawarma spices in the rice instead of the turmeric seasoning, so I just put the rest on the chicken. THEN I forgot to cook the scallion whites with the chicken! I usually am not that bad, I guess pregnancy brain. But I loved it so much and I want to make it again. Ethan fell asleep before dinner and Craig had a late lunch so he wasn't hungry, so they are having their's for dinner tonight. Or I can make something else and I can have their leftovers lol.

    This was delicious, and I got a thumbs up! lol. It will definitely be in our rotation. I did omit the honey since it was already pretty sweet, and we added a dollop of chili crisp.

The plan was to make this Salsa Chicken Skillet by BudgetBytes, but we had tomatoes from the garden to use so I made something else. I diced the chicken and cooked it according to the recipe, but I didn't make the sauce. I made homemade pico de gallo, and air fried zucchini with S&P at 400 for 10 minutes. The beans were Buch's Southwest Baked Beans with some frozen corn that I warmed in the skillet that I cooked the chicken in. The cheese sauce is just some jarred queso I warmed up. Served over a bed of rice, it was delicious!

   This was EXCELLENT. It's one of the best things I've ever made. The only thing I did differently was that I used yellow squash instead of zucchini since the store didn't have any, and I only used 1 bell pepper since that's all the grocery delivery brought me. I did top it with some sriracha, and I chopped the chicken before marinating it. It was so good, this will definitely go in the rotation.

Beef Kofta Meatballs with Roasted Veggies and Dill Yogurt Sauce 

  This dinner was freaking amazing. And I even messed it up lol. I thought I grabbed a pound of ground beef from the freezer, but it was a pound of ground turkey. That said, my 14 year old didn't like it. I'm actually really surprised since we do a lot of worldwide flavors. Oh well, I spent like 2 hours cooking so now he can get cereal or whatever lol.

  There is sooo much flavor in the veggies and meatballs. I did add a lil more seasonings to the veggies then the recipe called for because my veggies were huge and made 2 whole sheet pans full.

   I actually was out of white rice and I only had minute white rice. So what I did was I cooked chopped spinach and garlic in EVOO with some Better Then Bullion vegetable base, then made the white rice in that. 

  This whole meal was an explosion of flavor and I loved it. You could totally add feta to it, but I don't really like feta....I wish I did!

My husband loves this, I thought it was just ok. I felt like the sauce was to mayo-y tasting. The red splatters are my husbands homemade sriracha! Hello Fresh always has delicious recipes, it's just soooo expensive! I mean I guess it's cheaper then going out, but I love that it's so convenient and I don't have to think about it.   This was just a random dinner. I threw chicken breasts in the Instant Pot with sriracha, soy sauce, brown sugar, soy sauce and garlic. The rice was coconut rice. The broccoli I steamed and tossed with soy sauce. I also chopped up 2 small bell peppers and green onions. Yummy and quick!

Italian Turkey Sweet Potato Bowl


  So I cooked up some ground turkey, onions and garlic. I air fried a cubed sweet potato coated with olive oil, rosemary, garlic and s&p at 400 for 10 minutes. 

  Then I cooked up a head of broccoli, a few handfuls of shredded cabbage, spinach, and Italian seasonings and red pepper. Then I mixed it all together and served it over some rice. It's delicious.

Sweet Chili Rice Bowls

 


  Sweet Chili Rice Bowl! I marinated some tilapia in sweet chili sauce, soy sauce and minced garlic. Cooked in the cast iron skillet.

  I removed the fish from the skillet and threw in some frozen broccoli & edamame and tossed it in the left over sauces from the fish. 

  I had a little bit of coleslaw mix left from another dinner (not with sauce, just plain shredded cabbage) and I made a sauce with some Yum Yum Sauce, soy sauce, sriracha, honey and lime. Then tossed those together to marinate while I finished dinner up.

  The bowls consisted of brown rice, shredded carrots, broccoli/edamame, tilapia, asian coleslaw, and sriracha mayo.

Air Fried Tofu BBQ Bowls

 


    This was kind of a clean out the fridge meal. I marinated some tofu in sugar free bbq sauce, then tossed it in cornstarch/garlic/smoked paprika/salt/pepper and air fried at 380 for like 10 minutes? I don't remember how long. Then I roasted some sweet potatoes seasoned with brown sugar Truvia/smoked paprika/garlic/cayenne/salt/pepper. I also charred up some frozen corn and zucchini together in a cast iron skillet.

  The bowl consisted of spring mix, pinto beans, roasted sweet potatoes, charred corn/zucchini mixture, tofu, red onion, and avocado. Then I drizzled it with sugar free bbq sauce. Yum!

 I like using tempeh, it has a nice chewy texture and it's just a nice change every once in awhile. You gotta steam it for 10 minutes before you cook it though, it takes away any of bitter flavor it may have. I used air fried potatoes instead of polenta because I really needed to use up a ton of potatoes.

Hot Honey Chicken Bowls

 



  This dinner was amazing. If you like spicy, you'll love this....the spicyness of the sriracha and peppers with the sweetness of the honey just melds to perfection. Drizzled with ranch sauce to cut the heat a bit and add some freshness is the chefs kiss.

I also added 2 handfuls of spinach before I put it in the oven because more veggies. Also I used half white rice, half cauliflower rice that I cooked with veggie broth and garlic just to give it a bit more flavor.

  One of my new favorite dinners!

Asian Turkey Meatball Bowls

  I had originally planned to make these Egg Roll Meatballs (by The Natural Nurturer) to use up a half a cabbage I had leftover from cabbage soup, but I waited to long and it was bad. Bah. So I ended up looking for a different recipe.

   These Asian Turkey Meatball Bowls (by Recipe Runner) were a big hit! They were simple to make and chock full of veggies. Next time after baking the meatballs I'll probably throw them in the air fryer for a few minutes to try and crisp them up....they were really soft and barely together. But the flavor was phenomenal. I used a mixture of brown rice and cauliflower rice that I had seasoned with salt/pepper/garlic. The veggies I used in the bowl were carrots, cucumber, jalapeno, green onion, cilantro and edamame. I had some small bell peppers I meant to chop up but I forgot, oops. I topped it off with a drizzle of sriracha mayo. 

  Oh the sauce recipe for the meatballs called for hoisin and I didn't realize I was out until it was to late. So I just added extra soy and then some gochujang sauce and it worked fine. 

  I love that this recipe is also budget friendly, a pound of ground turkey is less then $4!

0 Point Cauliflower Rice Taco Bowl


 0 Point Taco Bowl

All ingredients are zero points on the Purple Plan.

- 1 bag frozen riced cauliflower

- 4 frozen Tyson fajita strips

- 1/3 cup pinto beans

- 1/4 cup fat free cheddar

- 1 tbs taco seasoning

- Salsa

- Non fat greek yogurt as a sour cream substitute. 

- Hot sauce of choice. I used Taco Bell Fire Sauce for this bowl.


Directions:

Heat the chicken tenders in the air fryer at 400 for 6 minutes. Head the riced cauliflower in microwave according to the directions on the bag. Combine everything into a bowl and toss with taco seasoning. 


Super easy to make, all ingredients can be kept on had and it's also very customizable! Add in lettuce, switch to black beans, make it vegan with chickpeas instead of chicken, add some diced green chilis or roasted corn. Yum!
