Chicken Ravioli with Pesto and Veggies

   This was really good! The only thing I did differently was I added red pepper, and I accidentally used the whole jar of pesto, I wasn't even thinking and I just dumped it in lol. Next time I'd add more tomatoes though. This is definitely rotation worthy! I liked how quick it was too.

   This was EXCELLENT. It's one of the best things I've ever made. The only thing I did differently was that I used yellow squash instead of zucchini since the store didn't have any, and I only used 1 bell pepper since that's all the grocery delivery brought me. I did top it with some sriracha, and I chopped the chicken before marinating it. It was so good, this will definitely go in the rotation.

Beef Kofta Meatballs with Roasted Veggies and Dill Yogurt Sauce 

  This dinner was freaking amazing. And I even messed it up lol. I thought I grabbed a pound of ground beef from the freezer, but it was a pound of ground turkey. That said, my 14 year old didn't like it. I'm actually really surprised since we do a lot of worldwide flavors. Oh well, I spent like 2 hours cooking so now he can get cereal or whatever lol.

  There is sooo much flavor in the veggies and meatballs. I did add a lil more seasonings to the veggies then the recipe called for because my veggies were huge and made 2 whole sheet pans full.

   I actually was out of white rice and I only had minute white rice. So what I did was I cooked chopped spinach and garlic in EVOO with some Better Then Bullion vegetable base, then made the white rice in that. 

  This whole meal was an explosion of flavor and I loved it. You could totally add feta to it, but I don't really like feta....I wish I did!

Spicy Lemon Garlic Baked Tilapia with Cornbread and Cheesy Broccoli

 I used this recipe for Spicy Lemon Garlic Baked Tilapia by Whisked Affair. The only different thing I did was instead of hot paprika, I used some cayenne. Then I made a Jiffy box of cornbread with a scoop of sour cream, I find that helps the cornbread not be so dry. The broccoli was just a steamable bag, that I mixed with garlic/pepper/salt and some 2% shredded cheddar!

Seasoned Chicken Breast with Roasted Green Beans and Mashed Potatoes

  This was another "whatever I have on hand" meal. Since I've started working full time I haven't been the best at meal planning. So I just cooked 2 chicken breasts in a cast iron skillet that were marinated with pepperoncini juice and some random chicken seasoning my husband has. Then I roasted some green beans at 400 for 25 minutes with extra virgin olive oil, salt, pepper, garlic and when it was done roasting I sprinkled it with parmesan. The mashed potatoes were instant lol, but instant still is tasty.

Pesto Zucchini Noodles with Chicken Sausage




Pesto Zucchini Noodles with Chicken Sausage

  This was really yummy. I did make a few changes though! :)

  First I sauteed half an onion, red pepper flakes, garlic and the chopped chicken sausages in a little bit of olive oil. Then I added 3 spiralized zucchini (the store had no summer squash) straight to the pan and seasoned it with pepper, a tiny bit of salt and the whole jar of pesto. Then I stirred it and let it sit for a minute to warm up the zucchini before I took it off the heat. 

  I spiralized most of the zucchini, but I didn't know what to do with the ends so I just chopped them up. It's not as pretty as the recipe picture though lol.

  For my son and husband I made some crescent rolls, but I ate it as is and it was super filling with the sausages. I'll definitely make it again.

  I only spiralized a little bit of my finger lol.

Chicken Veggie Stir Fry


 Chicken Veggie Stir Fry

  This was a clean out the pantry meal so I just used what I had. I had 2 chicken breasts, a bag of frozen stir fry veggies, frozen cauliflower rice and some white rice. I just sauteed 2 chicken breasts and cooked 1 cup of rice and microwaved the cauliflower rice. When they were done I combined them and added a little salt.  

 Random sauce ingredients I threw together:

 Soy sauce, ginger, garlic, red pepper flakes, rice wine vinegar, sesame oil, Truvia brown sugar. I did end up topping it with some teriyaki because there wasn't quite enough sauce.

  I topped it with a green onion and sriracha. Yum!

 Italian Turkey Stuffed Portobello Mushroom Caps

 So the flavor is pretty good, but the execution was a fail. The recipe says to bake the mushroom caps before you fill them (it's like stuffed bell peppers), but my mushroom caps turned flat.....I mean I could try and top them and awkwardly eat them, but instead I just chopped them up. I then added them to the turkey mixture, put it in a pan, then topped it with colby jack and cooked it at 375 for 10 minutes. 

We also had a side of roasted zucchini, and my husband had leftover macaroni salad. Definitely a fail :(
