Parmesan Garlic Spaghetti

Super easy and delicious of course! My husband loved it, but he said it wasn't super filling.....which was suprising with all the butter and carbs lol. Next time maybe I'll serve it as a side to some chicken, but he did ask me to make it again which is actually kind of a rare thing. But it is a Damn Delicious recipe and he seems to always love those. I made it as written.

The broccoli was just steamable frozen broccoli with some Kinders Woodfired Garlic seasoning.

I love this girls Instagram, she has super easy meals that just are low calorie and high protein. This dinner took like 15 minutes! Everyone liked it so I'll definitely make it again. I had never thought of just shaking seasoning in the broccoli bag before.

Dan Dan Noodles

 


Dan Dan Noodles

These were good, I probably wouldn't make them again unless requested. Only because I've made other quick noodle dishes I like better. Even though there was a bunch of chili crisp, there was zero spice so I did add sriracha. I also didn't have the green onion toppers, because my green onion went bad after only 2 days! Crazy. That would of really brightened it up.

This was a "use up what I have" dinner. The quesadillas had Monterey Jack cheese, leftover rotisserie chicken, bbq sauce, cilantro and onions. The rice was microwaveable cilantro lime rice. Super easy and I always like using up ingredients we already have. I really should have made some veggies, but I'm exhausted and just wanted to make a quick dinner. 

The baby was already asleep when I made this, but I'm going to see if he likes the rice tomorrow! So far he hasn't been a fan of rice, but he's only tried it twice.

Oh geez this is the worst food pic I've ever taken haha. My husband grabbed his bowl and I forgot to take a picture so I quickly snapped it. I guess the lighting was bad and I moved my phone away too quickly......oh well :) 

This was a wonderful recipe! The only thing I did differently was instead of fresh carrots, I threw in a bag of frozen peas & carrots after it was cooked (while the noodles cooked) because I had one already to use. I ended up using 2 chicken breasts and it was perfect. This was great since we had all the ingredients already, and my husband loved it. Definitely rotation worthy.

A super quick clean out the pantry meal tonight. I made the recipe as is, and the green beans are a frozen garlic butter blend and instant mashed potatoes. It was really good for a quick pantry meal! Quick meals for busy nights with a baby :)

This is delicious, filling and warm, perfect for these freezing January temperatures! I like that it's from scratch, no "cream of" soups, it really really tastes better that way. The only change I made was that I added garlic, because garlic makes everything better. We all loved it. Served with green beans!

Cheesy White Bean Tomato Bake

This was excellent! I needed something quick I can make while baby wearing, and this looked interesting. It's super flavorful, creamy and a wonderful comfort food. My husband said it was okay, but that was expected lol. I made the recipe as written and the smokey gouda really made a difference. We dipped the bread in and just also ate it with a spoon. The garlic bread was just a baguette that I cut in half and smeared with butter, garlic & parm. I was going to have it with a salad but the lettuce went bad, so no greens tonight oops.

This was just a random clean out the pantry meal. I was able to cook dinner again (yay!) Lincoln was cooperating lol. He likes to be held non stop, and mainly by me. But we've been having Craig give him a formula bottle (he's breastfed) in the evenings so I can do stuff....and it's really working out great. It takes some of the pressure off me and it helps them bond.

This quesarito was just whatever we had already lol. I spread a tortilla with a layer of canned fat free baked beans, a packet of Taco Bell hot sauce, ground beef that I cooked with taco seasoning, chopped onions, sour cream and cheese. Then I grilled it up in a pan and that's it. Super yummy and quick. 

For my quesarito I used a low carb tortilla and fat free cheese. 


I grilled the family's quesarito's with butter, but since mine was lower calorie I used this low calorie butter. It was crazy, instead of melting on the skillet it just evaporated lol.

Garlic Parm Wings with Mac & Cheese and Green Beans

This is the first meal I've cooked since Lincoln was born! He's 5 weeks now. Before tonight we had dinners I had prepped while I was pregnant, and some frozen foods. This was, easy fast and yummy.


I just air fried the wings, added pepper and a smidge of cayenne to the mac & cheese, and the green beans were frozen that I mixed with butter/garlic/salt/pepper.

Here's my little guy, he was born on August 30th.

I've made this recipe a million times. It's easy, good and cheap so that's great lol. The zucchini was from the garden that I tossed in EVOO, garlic/pepper/ranch seasoning and air fried at 400 for like 6 minutes.

Air Fried Chicken Tenders, Hatch Chili Goodles & Sauteed Zucchini with Onions

Using lightly breaded chicken and high protein pasta really helps make it a bit healthier. It's 100 degrees today and I wasn't turning on the oven, and I didn't feel like cooking too much. I made the Goodles as the directions said, with the butter options. I've tried the regular mac & cheese flavor without the butter option and it was kinda dry and not that great. The hatch chili flavor is reallly good, and even my husband said it's "not bad" which is high praise for a healthier option like this lol.

I followed the directions for the tenders too, I think it was 390 for 10 minutes? It says on the bag. The sauce is just bottled Chick-fil-a sauce because that's always delicious. I was going to make a high protein dipping sauce but like it said, it's hot so I didn't want to spend to much time in the kitchen.

My husband planted some zucchini plants and we didn't even realize we had any growing until we found this giant one buried under some leaves! It's as big as my 40oz cup.

I pretty much followed this recipe by Well Plated, except I did add garlic because garlic good.

Lemon Salmon Pasta with Asparagus and Garlicky Green Beans

This pasta was a mixture of these two recipes:


  I followed the canned salmon pasta recipe, but Walmart was out of fresh parsley, so I used a squirt of the refrigerated tube basil for the freshness. I also added some dried dill because I was worried it would be missing out on flavor. Oh and I also used angel hair pasta instead of spaghetti, I felt it would be a better texture.

  I also wanted to stretch it some so I added a half bunch of chopped asparagus, 1/4 cup of heavy cream and a handful of shredded parm like the 2nd recipe. Next time I would double the 1st recipe because even with the additions, 4 oz of pasta isn't enough for 3 of us. 

  I normally buy steam in the bag green beans, but Walmart was out and replaced it with a giant bag of fresh green beans. So I steamed/boiled/skillet? Cooked the green beans in about a cup of chicken broth, 3 tbs butter, salt/pepper/garlic/dill/tube parsley for about 10 minutes. It was a bit too long so they got a little mushy, but the flavor was super good. After they cooked I tossed them in some leftover lemon zest and the other half of the lemon, squeezed. 

  My teenager also got some garlic toast because teenager. I LOVE this. The freshness of the herbs and salmon with the lemon, and the creaminess of the cheese and heavy cream. Perfection. Plus it's super quick!

This was just a last minute "what do we have" meal. The burgers are just Walmart brand frozen patties that I cooked with Worchestershire and a salt/pepper/garlic blend. I had a bag of yellow potatoes I had to use up so I was going to make fries, but I just made this air fryer recipe instead. My son also had a cut up Cara Cara orange because they are amazingly delicious!

The burgers were just topped with the normal toppings, and I added those Frank's Hot Pickle's that I talked about on the smash burger taco post.  No one liked those pickles so they took them off lol.

Easy dinner that's always yummy!

This was an unplanned last minute meal. I defrosted some tilapia and randomly marinated it for a few hours. Then I seasoned it with the listed seasonings, air fried it at 400 for 5 minutes, then flipped it and seasoned the other side and cooked it for 5 more minutes. It was really good! I didn't measure anything I just seasoned with my heart.

The seasoning was the same as the marinade but without the evoo & lemon juice.

Marinade:
- EVOO
- garlic powder
- onion powder
- lemon juice
- Italian seasoning
- smoked paprika
- cayenne
- salt, pepper, garlic
- topped with grated parm before cooking

We had a side of ranch mashed potatoes that I added extra ranch powder & pepper to. The frozen mushroom cauliflower blend I added some Italian seasoning, salt/pepper/garlic and parm. It was fine but I'm not a huge fan of cauliflower rice. 

I loved how quick this meal was, it literally took 10 minutes to cook.

Easy Weeknight Spaghetti

Sometimes I don't want to spend the extra money getting a mixture of pork & ground beef, or spend the time making my homemade sauce. Right now I'm 20 weeks pregnant and I work full time so I'm tired lol. So my quick spaghetti "recipe" if you'd even call it that is a pound of ground beef with 1 jar Prego, garlic knots and a caesar salad kit. 

After I brown the ground beef with a chopped onions and a little Italian seasoning, I drain it then put it back on the skillet with jarlic, and with the jar of sauce + about 1 cup water that I shake in the jar. Then I add extra Italian seasoning, pepper, red pepper and a little garlic powder. If I make it early enough and plan to simmer it, I'll add a bay leaf. If not I just serve right away over noodles and topped with parm & red pepper.

Roasted Veggies with Chicken Sausage & Rice

I just chopped up broccoli, 2 bell peppers, a bag of small red potatoes, and a package of jalapeno monterey chicken sausages and tossed it in EVOO with salt, pepper, garlic, and a hatch chili seasoning. I roasted the potatoes at 400 for 30 minutes, and the veggies & sausage for like 20 minutes. I served it over brown rice with pepperoncini hot sauce.

This was just a quick "what do we have at home" meal. Chicken was coated in salt/pepper/garlic/smoked paprika/chili powder and cooked on the skillet in a little EVOO and worcestershire. Green beans were microwaveable steamable, that I added to the skillet (when chicken was done and removed) with a chopped bell pepper to toss in the juices with a little butter and more seasonings. Mashed potatoes were instant and always delicious that I poured extra chicken juices on.

Easy 15 Minute "Grilled" Chicken & Veggies

This was super easy, quick and very flavorful.

Ingredients:
- Chicken thighs
- Garlic powder, salt, pepper, smoked paprika, chili powder
- 2 bell peppers slices
- 1 onion chopped thickly
- Worcestershire

 Nothing was measured, I just winged it. Heat cast iron skillet with a little olive oil. Sprinkle the seasonings generously over the chicken thighs front and back. Cook chicken in cast iron skillet with worcestershire. Remove chicken when cooked then cook veggies in a splash more worcestershire until they start to have blackened marks but still are a little firm.

  I served it with instant mashed potatoes and frozen zucchini fries. Delicious and it will definitely go in our rotation. I thought it was cute that the bell pepper was also pregnant :)

Lime Shrimp Dragon Noodles

This is honestly one of the best things I've ever eaten. Literally incredible. The only change I made to the recipe was I added a spoonful of peanut butter and topped it with chili crisp. In fact it's so good that I'm going to the store tomorrow to get the ingredients to make it again. All I need is another lime and another bag of shrimp. There is leftover cilantro and green onions and I have ramen packs in the pantry already.

 Ethan loves it too. We never eat shrimp because Craig's allergic but he's out of town so that's when we make shrimp recipes since I love them.
