Slow Cooker Cowboy Butter Chicken Orzo


I forgot to get a picture of dinner again, its crazy now that Linc is 1 in a week so I hardly have time to cook, let alone take pictures lol. 

I made this recipe exactly as written, and we loved it. Ethan said I definitely need to make it again. My slow cooker finished cooking the chicken around 2-2.5 hours, it was super fast. Then the orzo took 40 minutes. So good and so flavorful!

Pork Tacos

 


Pork Tacos

So this started out being Easy Pork Carnitas, but I kept not being able to make dinner because of the baby....so Craig ended up just smoking the meat with seasonings. I think he used a fajita seasoning and some sort of chipotle seasoning. It was really good! So I just made tacos with cheese, lettuce, cilantro, onions and Cholula Chipotle Cremosa sauce. Super good and flavorful!

Parmesan Garlic Spaghetti

Super easy and delicious of course! My husband loved it, but he said it wasn't super filling.....which was suprising with all the butter and carbs lol. Next time maybe I'll serve it as a side to some chicken, but he did ask me to make it again which is actually kind of a rare thing. But it is a Damn Delicious recipe and he seems to always love those. I made it as written.

The broccoli was just steamable frozen broccoli with some Kinders Woodfired Garlic seasoning.

I broiled it literally for 1 minute and it burned, argh. Still tasted good, I scraped off the mostly burned parts. I made the recipe almost exactly as written, except I used red onions instead of green because I already had some cut up. I'd defintely make again, just maybe broil it for like 20 seconds!

Low Calorie BLT Chicken Salad

This was just a quick lunch idea that I just randomly threw together, ingredients are approximated. It was really good and I love having something that I can throw on some bread for lunches.

- 1 container already shredded rotisserie chicken
- 2 stalks celery, chopped
- 1/4 red onion
- 1 container cherry tomatoes
- 1 box already cooked bacon
- 1/2 cup nonfat greek yogurt
- 1/2ish cup non fat mayo
- salt, pepper, dill
- I also added low sugar craisins to mine, but I didn't mix it in because no one else wanted them in theirs

I love this girls Instagram, she has super easy meals that just are low calorie and high protein. This dinner took like 15 minutes! Everyone liked it so I'll definitely make it again. I had never thought of just shaking seasoning in the broccoli bag before.

Sheet Pan Tacos


These look like a mess but they were tasty. I didn't warm the tortillas quite enough before I filled them because some of them split, but they stuck together fine after cooking. I did make 2 changes to the recipe, I used lean ground beef and instead of rotel I used some of my husbands homemade smoked salsa. They were really good and my son loved them, and his friends came over the next day and had some too. My husband wasn't hungry so he didn't try them. I'd make them again for sure!

This was a super quick and easy meal. I just had some bagged salad, frozen chicken tenders, croutons, shredded parmesan and Bolthouse caesar dressing. My son also had an extra tender (with McDonald's sauce lol) and some garlic bread. Yum!

Lemon Parmesan Chicken & Rice

Huge portion for my teenager lol. This was really good. It reminded me of the chicken & rice recipe that my son loves. I made it almost as is, the only change I made was that I coated the chicken in the seasoning instead of putting it in the rice. I feel like it flavors the chicken more and there is plenty flavor with the rice. Oh yeah I also only used 1.75 cups of water, I think 3 cups would of been waaay to much since the rice was a smidge mushy even like that. But it was really good! I'd make this again. We served it with a bagged Caesar salad kit. I love lemon flavors and I think it would really be upgraded with a fresh herb like basil or parsley. 


I gave some to my 6 month old (along with peas and carrots) and he didn't care for it. But to be fair it was too close to bedtime so he didn't want any real food, just to nurse lol.

Instant Pot Chicken Noodle Soup

Oh geez this is the worst food pic I've ever taken haha. My husband grabbed his bowl and I forgot to take a picture so I quickly snapped it. I guess the lighting was bad and I moved my phone away too quickly......oh well :) 

This was a wonderful recipe! The only thing I did differently was instead of fresh carrots, I threw in a bag of frozen peas & carrots after it was cooked (while the noodles cooked) because I had one already to use. I ended up using 2 chicken breasts and it was perfect. This was great since we had all the ingredients already, and my husband loved it. Definitely rotation worthy.

This is delicious, filling and warm, perfect for these freezing January temperatures! I like that it's from scratch, no "cream of" soups, it really really tastes better that way. The only change I made was that I added garlic, because garlic makes everything better. We all loved it. Served with green beans!

My husband didn't want anything special for his birthday, but I had been thinking about this recipe for awhile. We both LOVE cookie butter so I had to try it, and it didn't disappoint. It's incredible, like literally one of the best things we've ever ate. I just made them again because we have family visiting, they are so good.

I didn't even get a picture of it plated because baby was being fussy. This was super good and it will go in our rotation! I liked how easy it was and everyone loved it. I made it exactly as written using Buffalo Wild Wings Garlic Parm sauce. I bought a bag of already chopped broccoli so the longest thing was quartering potatoes, and I really could just use my veggie chopper for that.

These are INCREDIBLE. I always make the sweet potatoes every Thanksgiving and I so far haven't landed on a recipe that I'd consider to be "the one". I usually make them with a marshmallow or a oatmeal crumble topping....normal recipes. But I stumbled across this while looking once again for a recipe that I'd make yearly. Everyone loved this. It was sweet, salty, crunchy and with just a smidge tarte from the cranberries. I'll definitely be making this yearly!

Oh I made it almost exactly as written except I left out the pecans because my sons allergic. I was worried there wouldn't be enough topping so I added a half pack of maple brown sugar instant oatmeal into the topping mixture too.

This was so good! I basically followed the recipe by Pioneer Woman. I didn't have any turnips or parsley, and I used baby carrots since I had so much. I also just made instant mashed potatoes because I have a 3 month old and can barely cook lol. I also added a can of golden mushroom soup since I had it. We all loved it.

Cheesy White Bean Tomato Bake

This was excellent! I needed something quick I can make while baby wearing, and this looked interesting. It's super flavorful, creamy and a wonderful comfort food. My husband said it was okay, but that was expected lol. I made the recipe as written and the smokey gouda really made a difference. We dipped the bread in and just also ate it with a spoon. The garlic bread was just a baguette that I cut in half and smeared with butter, garlic & parm. I was going to have it with a salad but the lettuce went bad, so no greens tonight oops.

Chicken Tikka Masala with Indian Spiced Masala Zucchini

Don't mind the chip in the plate.....it gives it character. 

I made the Chicken Tikka Masala almost exactly as written. The only difference is that I didn't measure how much chicken thighs I used, I just grabbed a few....and I used jarlic instead of cloves and refrigerated squeeze ginger instead of chopping fresh. Oh and I had to use red onion because I was shockingly out of white/yellow.  It's delicious of course because yum!

The Indian Spiced Masala Zucchini I made because we still have so many tomatoes & zucchini from the garden, so I headed to Pinterest to look up "Indian spiced zucchini". I found this recipe that I had all the ingredients for! Well almost, instead of the cumin seeds I just used dried cumin. I also didn't measure the veggies lol. I used 2 tomatoes, half a red onion because I was out of white, and probably 3 cups of zucchini. It was really good too!

I love these flavors and want to make them more often, but Craig's not the hugest fan.....he likes it but not that often. Some homemade naan would of been good to sop up extra sauce..... if I had the energy! I'm due any day and I'm so excited/nervous :)

I had the best intentions for making this as the recipe said to lol. I had planned on just buying a tzatziki sauce because I'm due any day now and even cooking takes it out from me. I bought a pound of ground turkey, and I also had a 1/2 pound of ground beef leftover from making beef stroganoff, so I added that to the ground turkey. Which meant I added more spices too. I normally am not a fan of feta but it really does work with these flavors.

The first issue I had with this dinner is that I could not get the pita's into pockets, probably because I just bought the Walmart brand and they are too thin. So I thought oh well we'll have pita tacos, that's fine. The second issue is when I went to make the pita pockets.....I realized I forgot to order the tzatziki sauce! I was so bummed because I love tzatziki sauce. So instead I spread the pitas with a layer of hummus and a thin layer of garden veggie cream cheese. I also put some ranch on my sons pita pocket. Overall they still were delicious and really fresh tasting, and I'd like to make it again but actual pocket style with tzatziki sauce. Oh yeah and the cucumbers & tomatoes were from Craig's garden!

HelloFresh Cheddar Grilled Cheese & Creamy Tomato Soup

Grilled cheese & tomato soup is one of my fav meals, but I wouldn't normally get it from Hello Fresh since it's so simple to make at home. But it was offered for like $5 as an add-on, not as one of the dinner options. I figured $5 for a quick lunch is great.

But this is incredible. It's the best grilled cheese & tomato soup I've ever had. The herb butter really makes it, and they actually gave slices of Sargento cheese. Sourdough is always the best for grilled cheese, and the soup was thick and flavorful. I would definitely get this every time I see it if it is like $6 and under lol. Maybe $7.
