 Asian Turkey Meatball Bowls with Toasted Sesame Veggies

  I've made these meatballs before, they are phenomenal. So much flavor! I followed the recipe pretty closely, the meatballs and sauce were the exact recipe. The difference was that I served it over 1 packet of that quick boil rice since that's the perfect amount for us 3. I also forgot the sesame seeds! I used to never understand why anyone would make quick boil rice, but then I realized that I didn't need to measure and there was no leftovers lol. Also, I served it on a plate not a bowl.

  For the toasted sesame veggies, I just combined all these together.....no measuring.

-About half a bag of shredded coleslaw mix
-Half a cucumber
-1 Jalapeno
-1 carrot ribboned
-1 Red bell pepper 
-Kraft Toasted Sesame Dressing. I just squirted and mixed until I felt there was enough.

I topped everything with my husbands homemade sriracha and diced seeded jalapeno.

  Yummy low carb dinner. The chicken thighs that the grocery pickup gave me were the smallest ones that I've ever seen, so each person got 2. What I did differently from the recipe was that I sprinkled the thighs with garlic powder/salt/pepper/cayenne before I cooked them, and I had no fresh parsley to top it with. Now that I'm thinking about it, I could of just used some dried parsley. Oh well, next time.

 The cauliflower rice was super good but I did a few things differently.  I sautéed onions first, and added 8oz of mushrooms. I also just used 1 bag of frozen cauliflower rice instead of a head, and omitted the almonds since my son is allergic. I'll definitely be making this again, it's super easy and full of protein from the hemp hearts.

  The salad was just a chopped up romaine head (heart?) with some shredded carrots and Caesar dressing. I didn't care for this dressing too much.....I haven't been able to find one that tastes like the kind you get in a restaurant. Maybe I need to try making my own. 

  This was the first real meal that I've made in a week, I've been so so sick. We went on vacation to Cancun on February 16th, and I sat next to a teenage girl on our flight that was coughing a lot. I really didn't think anything of it since I rarely get sick.....I haven't even been sick in years. But I guess just traveling will do that to you. Mid week I did make a big 'ol pot of random chili ingredients that I had laying around just to get some food in everyone that wasn't microwaveable lol. I really didn't measure, I just threw all this together in the slow cooker until dinner.

Easy Chili:

- Homemade canned taco meat my parents canned themselves
- Frozen corn, bell peppers, onion
- Canned pinto beans, chili beans, green chilis and tomato soup....I had no other tomatoes but it worked perfect
- Spices: Chili powder, garlic powder, onion powder, salt, pepper, cumin, sugar

Pizza Night

 




Pizza Night

Pizza is so freaking expensive, so I thought we'd try making it at home. We've done Boboli pizza here and there, and we've done refrigerated pizza dough before....and always using already made pizza sauce. Well this time we made it all from scratch. Homemade dough, homemade sauce. Already shredded parmesan, and I shredded some full fat kinda squishy mozzarella lol....I'm not sure what type it was? It wasn't a hard brick, it was semi solid mozzarella lol. 

Loved it! I used the double pizza dough recipe, so I doubled the sauce. Don't do that....I have sooo much sauce left over. I used a mish mash of recipes since we don't have a pizza stone.

  These wings had a good flavor, but my husband said they were too wet. So next time I'll try air frying them with the sauce. I've made the cauliflower mac and cheese before, and it's super good. But I only had a broccoli so I substituted it......don't do it lol. Or if you do, don't roast it....it tastes weird. I love roasted broccoli, and I love broccoli and cheese, but roasted broccoli and cheese don't go together. I should of just steamed it. Oh well, we ate it anyway.

Best Damn Chicken, Cauliflower Mac n Cheese, Caesar Salad

  I used the same seasoning blend from The Best Damn Air Fryer Chicken Wings from Recipe Teacher.
 for some chicken thighs. Then I mad some Cauliflower Mac n Cheese by Our Countertop. We also had a simple side salad with chopped tomatoes and Caesar dressing. Yum!

  This was really good, but really filling. I did make a few changes. I added an onion, omitted the pepper jack, and added 1 tsp of Italian seasoning instead of 1/2 tsp. We are new to keto/low carb, but I'm still not so sure about eating this way......I don't know, I feel like it's so many calories and fat lol.

Low Carb Orange Ginger Salmon Fried Rice Bowls

  I marinated some salmon in G Hughes Sugar Free Orange Ginger marinade with some garlic and soy sauce. I air fried the salmon at 400 for about 10 minutes. Then I made a spam fried rice recipe that we love, but without the spam and with cauliflower rice instead. I reduced the rest of the marinade down to a sauce and topped with sriracha!

  I just made a chili using a pound of ground beef, 28 oz tomatoes, half a can of tomato paste, bell peppers, onions, garlic, chili powder, paprika, cumin, s&p, and a little beef broth. I kinda just winged it.

  The buns were a keto bun I found at Walmart, they weren't very good at all....but it was covered with enough toppings that it was fine. I used the lowest carb hot dog that I found and topped with mustard and cheese. Yum!
