Roasted Veggies with Chicken Sausage & Rice

I just chopped up broccoli, 2 bell peppers, a bag of small red potatoes, and a package of jalapeno monterey chicken sausages and tossed it in EVOO with salt, pepper, garlic, and a hatch chili seasoning. I roasted the potatoes at 400 for 30 minutes, and the veggies & sausage for like 20 minutes. I served it over brown rice with pepperoncini hot sauce.

This was really good! I have to say I was worried because it doesn't actually call for any spices. So I did add salt, pepper and garlic powder just in case. I also added in some jarlic and a couple small bell peppers because I had them to use. I also had to substitute the monterey jack cheese for fiesta cheese because that's all they had. I used Target brand andouille chicken sausage. I'd make this again! I actually was going to add in some of the refrigerated squeeze cilantro because we have it, but I forgot. I bet it would add some bright flavor.

   This was a clean out the pantry meal I just kind of threw together. I had almost a whole pack of those jalapeno cheddar dogs to use up and a bunch of veggies. I chopped up 2 sweet potatoes, 3 bell peppers, 1 onion, a handful of baby carrots, and the package of cheddar dogs. Then I tossed them all in EVOO, salt, pepper, garlic, Italian seasoning and smoked paprika. I roasted them at 400 for 20 minutes, then stirred and put them back in for 10.

   I then just cooked up some white rice in chicken broth, and topped it all with this delicious pepperoncini hot sauce. I wish it came in a bigger bottle!

Italian Chicken Sausage Alfredo with Roasted Broccoli

    This was pretty much a random clean out the pantry meal. I had some Italian flavored chicken sausage that I sliced and cooked in butter & EVOO with a chopped onion. Then I added jarlic with a squeeze of basil from a tube, and seasoned it with Italian seasoning, salt, pepper garlic and red pepper. Then I added a jar of alfredo and filled that with hot water and shook it around and added it to the pan. Then I plopped in some chicken boullion and the egg noodles and let it cook with the lid on for 10 minutes. After it was cooked I added a couple handfuls of spinach and some grated parm.

   Delicious! Everyone loved it. The broccoli is tossed in EVOO, salt, pepper garlic and air fried at 400 for 15 minutes. Then I tossed it in a little spray butter, lemon juice and canned parm.

    This was a fail & a pain to make lol. The fritters were bland and I had never made them before so they were kind of falling apart even with extra flour. The sausage & veggies my husband always likes, and my son usually does. My son didn't like it this time but he said he had a stomach ache so maybe that was it. I'm not a fan of sausage so I don't really eat it. Oh well not everything can be a winner.

Edit: The fritters were really good the next day air fried! I guess they just needed a little more time to meld.

  I marinated chicken thighs overnight in pickle juice and minced garlic. Then I made "breading" by crushing spicy pork rinds, parmesan cheese and garlic powder in a ziploc bag. I tossed each thigh in the ziploc bag like shake and bake and air fried it at 370 for 20 minutes. Super moist and juicy, with a hint of pickles. 

  For the cauliflower rice I used this recipe by Instrupix.  The only difference was that I only used 1 bag of cauliflower rice, and I omitted the bell peppers since I didn't have any. I added 8oz of mushrooms and 2 stalks celery. The sausage I used was super spicy though, I was surprised. It was delicious but too spicy for my son. Next time I'll use a different one for sure.

Italian Smoked Sausage Wraps with Fries



 

    I have no idea what the name of the recipe should be, but I make those sandwiches that have smoked sausage, bell pepper, onion and Italian seasoning....cooked in a little olive oil. Served in a toasted bun with a little provolone cheese.  We were trying to do this a little healthier, so instead of a hoagie roll we had them in low carb spinach tortillas. I also had planned for the cheese to be a Laughing Cow wedge, but my husband wanted some cheddar instead. Oh well, we still saved lots of calories and carbs by substituting a roll for a low carb tortilla lol.

  You just chop up an onion, two bell peppers, and a package of smoked turkey sausage. Heat up a little olive oil and cook the onions for like 2 minutes. Then add the bell peppers, turkey sausage, 2 tbs garlic, salt/pepper, and a bunch of Italian seasoning. I made these quesadilla style and they were delicious!

 For the fries I took two potatoes and chopped them up fry style (julienne?) tossed them in some cooking spray and french fry seasoning then air fried like 18 minutes or until I felt they looked good.

 My sons plate also had some apples and peanut butter with a sprinkling of cinnamon and sugar.
