Meatloaf with Herbed Rice & Veggies

Linc is almost 1 year old, and I still am not cooking as much as I was! This was just a basic 2lb meatloaf recipe with microwaved rice and steamed/microwaved veggies. Super good and pretty easy, the hardest part is waiting an hour for the meatloaf to be done.

These were really good! The instructions called to make 4 loaves but since there is only 3 of us I made 3, which was the perfect size. My teenager also had some garlic bread on the side. I did add an egg to the meatloaf because we had it, and I added garlic to everything. I would get this again for sure. I kept skimming the directions and couldn't for the life of me find what to do with the broccoli (I was very distracted lol) so I just air fried it at 400 for like 15 min. Later I saw what the instructions said, oh well still good since I love roasted broccoli.

It was also pretty quick to make so that's always a plus!

Chipotle Cheddar Turkey Meatloaf with Mac & Cheese and Honey Bourbon Salad

  This meatloaf is PHENOMENAL. The recipe called for ground chicken but the store didn't have any so I subbed turkey. I made everything else as is except I used half an onion instead of a shallot. Oh and the store was out of cilantro so I used a squeeze of that fresh tubed cilantro. We had it with Bob's mac and cheese and a bourbon honey mustard salad kit. The mac & cheese was a little bland, but the salad kit was absolutely delicious.

  Next time I might try making it more WW friendly with fat free cheddar and a sugar free sweetener for the glaze.


I made a quesadilla the next day with the meatloaf and it was incredible. So so good. I also ate the leftover salad and it stayed nice and crunchy because it was sprouts and cabbage instead of lettuce.

   The meatloaves and fries were delicious, the carrots were kinda gross and the whole thing was a pain lol. It used a ton of dishes, the crispy shallots burned super easy and the carrots were flavorless with just salt and pepper. 

   Luckily I had some crispy fried onions in the cupboard, and I tossed the carrots in a mixture of hot honey and butter which was better. I like the idea and I'd making something like this again, but I wouldn't order it from Hello Fresh.

   This was really good, I would definitely get this recipe again! I added some of the thyme sauce to the brussel sprouts because they were bland, and my husband, who hates brussel sprouts said they were "ok". So that's a win lol. This was my sons plate and he had some toast because I didn't think he'd eat the brussel sprouts. This would be easy to recreate and I never thought of making a thyme sauce like this before.

Meatloaf with Homestyle Cauli-tator Mash 8 Points

 This was delicious! Literally, this was the FIRST TIME that my meatloaf actually sliced, rather then just crumbled. Although the ketchup topping looks streaky and weird lol.

I followed the meatloaf recipe exactly as written. 5.25 ounces is 4 points. The serving in the picture is a lot bigger because it's my husbands plate and he's not really following WW.

The only thing I did differently for the cauli-tator mash was to add a bunch of garlic. The whole family loved it. 3/4 cup is 4 points.

What I Eat in a Day



My menu for the day:

- Breakfast was 3 scrambled eggs and a clementine.

- Lunch was a big salad that consisted of Caulipower chicken tenders, chickpeas, spring mix, Bolthouse Farms Ranch, and a sprinkling of chia seeds.

- Dinner was Turkey Meatloaf by Skinnytaste, green beans I just sauteed in some I Can't Believe It's Not Butter spray, chicken broth and garlic. I sprinkled the top of the green beans with a little bit of hemp seeds. I also toasted a slice of Sarah Lee 45 Calorie Bread and spread 1 wedge of Laughing Cow Pepperjack Cheese on it.

I made sure to drink a lot of water in between meals to keep me full. I also had 2 cups of coffee with zero points worth of creamer. I like to use the Sugar Free Italian Sweet Cream creamer.
