Traditional Fettuccine Alfredo

Traditional Fettuccine Alfredo

My family liked this, I did not. It just tasted like noodles with too much garlic butter, you could hardly taste the cheese and it was pretty oily from the whole stick of butter. I wouldn't make it again unless requested by my family. Or actually I'd cut down on the butter and add more cheese.

I did like the veggies, they were a frozen "grilled Mediterranean blend" that I air fried.

Fettuccini with Cauliflower Alfredo Sauce and Sweet Peas & Blackened Chicken

Fettuccini with Cauliflower Sauce Alfredo Sauce and Sweet Peas recipe by Emily J Goodman, click here for recipe

This was really good! The only thing I did differently was that I used regular 2% milk instead of almond since my son is allergic. I also used Carba-Nada pasta which is pretty good....it's not the most amazing tasting pasta, but it'll do.

I served it with a side of blackened chicken tenders. I just coated some tenders in Kinder's Blackened Seasoning and air fried at 380 for like 15 minutes or so.

Lightened Up Blackend Chicken Alfredo with a Side Salad 6 Points

Delicious! The noodles do have kind of a "diety" flavor, but the texture is great and we do enjoy them for a low point noodle, I get them at Meijers. I cut up 2 chicken breasts and COVERED them with Kinders Blackened Seasoning, then just cooked them in a cast iron skillet until they were done, like 12 minutes or so. The noodles take 3 minutes to cook. The salad is just a garden salad kit, cherry tomatoes, pepper and some 0 point Walden Farms Chipotle Ranch dressing.

- 1 1/2 cups noodles are 3 points

- 1/3 cup Alfredo is 3 points

- Chicken is 0 points

- Salad is 0 points.
