 Tuna Patties with Baked Potatoes, Corn and Baked Beans

  These were really good. I made the tuna patties almost exactly like the recipe but I added in ranch seasoning and more dill. The baked potato was air fried for like a half hour and topped with sour cream, butter and pepper. We also had air fried corn and I cut it off the cob for my son who has braces. We dipped it in tarter sauce and it was a delicious easy pantry meal!

   I made this again on 8/8 but this time I roasted some rosemary garlic zucchini and we had a dill pickle salad kit. So good!

   This was so perfect to cook for summer. It's 97 out and I didn't want to stand in front of a hot stove, and the only thing you cook in this recipe is the tortellini. The changes I made with this recipe was that I switched the olives for a bell pepper since I had one to use up, and none of us like olives. I also used a 19oz bag of tortellini instead of 16oz so I was kind of worried that there wouldn't be enough dressing. But there was! It's so fresh and yummy.

BBQ Chicken Tostadas & Ketchup Taste Test
 
  We had leftover beer can chicken that my husband smoked this weekend, and this was the third night of it lol. I just quickly made some tostadas with street taco flour tortillas and I topped them with avocado, pepper jack, chicken, shredded cabbage, bbq sauce and red onion. 
 
  I received some pepper ketchups from Influenster to try so we did a tator tot taste test! It was fun :)

Easy Fish Tacos with Sriracha Lime Crema

This wasn't a Weight Watcher recipe, but I adapted it to be WW. I seasoned some fish and cooked it for 12 minutes at 400 in the oven. I made a sriracha lime crema with a 1/2 cup nonfat greek yogurt, half a lime, a tbs minced garlic and a few squirts of sriracha. 

  The tacos themselves consisted of tilapia, avocado, salsa, shredded cabbage, crema. On my husbands and kids tacos I added cotija cheese just because we had it leftover. The picture has just regular street taco tortillas. Mine was WW and I used thin corn tortillas that were 1 point each. So each taco ended up being 1 point, but I sliced 1/4 avocado and split it between the 2 tacos for 1 point. So for all 3 tacos it was 3 points. I wasn't super hungry or I would have more, since each taco is only 1 point I could have several. Or I could make a side of mexican cauliflower rice, or fat free refried beans!

Garlic Butter Chicken with Zucchini and Corn

  I know I say most of the recipes I post are super good, it's because I'm picky on what I think my family would like. Me.....I'll eat almost anything and love it. Although some weird sort of giant clam abalone looking thing was served once (I forgot what it was obviously) and I couldn't bring myself to try it.....I haven't tried clams either. People have said the texture is "snot like" and I just cant imagine slurping a big snot chunk lol.  Anyway, that has nothing to do with this dinner. This dish was delicious! I did make it Weight Watcher friendly by cooking it in chicken broth and a lil I Can't Believe It's Not Butter, and I admit the ICBINT tastes a lil weird and it would taste better with butter, but I gotta lose pounds okay. I served it with instant mashed potatoes for the rest of my family, I just ate it as is. Yum!

One-Pan Chicken Thighs with Cilantro-Lime Pinto Bean Rice

   This was really good, the only difference I did was that I used pinto beans instead of black beans, and I sprinkled cotija cheese on the rice because we already had some. The salad was the dill pickle salad kit that we love. Quick and easy meal :)   I just remembered I was going to put in a little spinach to just add some more greens!
