Smoked Ribs, Charred Jalapeno Corn and Mashed Potatoes

 

  

 My husband just bought a smoker so he smoked some ribs for dinner. For the corn I charred some frozen corn and fresh jalapenos in a cast iron skillet with a little butter, and I seasoned it with Mrs. Dash Chipotle seasoning. With a side of instant mashed potatoes because yum :)

  Spinach Artichoke Cheesy Tortellini with Lemony Green Beans for dinner. The recipe is from Rachael Ray Express Lane Meals book. The green beans were steamed in the bag and tossed with a little bit of butter, Kinder's Master Salt and lemon juice.

Homemade Ramen

 

  My son wanted some homemade ramen for his 13th birthday dinner. I've made it once before but I always forget how easy and delicious it is. I use these two recipes below as a guide and kinda wing it.

Sweet Chili Rice Bowls

 


  Sweet Chili Rice Bowl! I marinated some tilapia in sweet chili sauce, soy sauce and minced garlic. Cooked in the cast iron skillet.

  I removed the fish from the skillet and threw in some frozen broccoli & edamame and tossed it in the left over sauces from the fish. 

  I had a little bit of coleslaw mix left from another dinner (not with sauce, just plain shredded cabbage) and I made a sauce with some Yum Yum Sauce, soy sauce, sriracha, honey and lime. Then tossed those together to marinate while I finished dinner up.

  The bowls consisted of brown rice, shredded carrots, broccoli/edamame, tilapia, asian coleslaw, and sriracha mayo. 

 

Sweet Garlic Chicken, Cheesy Broccoli and Skillet Veggies

 

  Random pantry meal. I marinated some boneless skinless chicken thighs in G Hughes Sweet Vinaigrette, lemon juice, minced garlic and black pepper. I cooked it in my cast iron skillet.

  The broccoli is steamed frozen broccoli mixed with salsa con queso and pepper.

  The veggies were cooked in the chicken juices in the cast iron skillet. I cooked the potato until it was almost done, then added in the rest of the chopped mushrooms from another dinner, some frozen bell pepper/onion mixture, a few hand fulls of spinach and seasoned with: Kinder's Master Salt, Buttery Steakhouse and pepper. Not very pretty but it was tasty.

BBQ Chicken Salad


 

  This just came together as I went lol. I took a few chicken thighs and seasoned them with Kinder's Blackened Seasoning, and cooked them on a cast iron skillet. I removed them from them from the pan, added a little bit of butter and put in a can of rinsed pinto beans and about a cup of frozen corn. I warmed that up while scraping the bits off the pan. While that was warming, I shredded the chicken and tossed it with G Hughes Sugar Free BBQ sauce.

  I chopped up these ingredients:
- Bell pepper
- Jalapeno
- Hardboiled Eggs
- Cilantro
- Red Onion
- Cherry Tomatoes

  I used some spring mix and cole slaw mix (not with the dressing, just shredded cabbage) as my base then tossed it all together. I topped it with some Bolthouse Farms ranch. Yum!

Garlic Paprika Chicken, Veggie Orzo and Crescent Rolls


    I cannot for the life of me remember what recipes I used for this meal lol. 

  Garlic paprika chicken, veggie orzo and some crescent rolls. I DO remember that it was good!

Greek Yogurt Hotsauce Chicken with Potato Cauli Mash

  The potato cauliflower mash was delicious, like always. 

  The chicken had a really good flavor, but the panko crumbs on top ended up just being mush...so next time I'd leave it out. 

  I served it with some spring mix, shredded carrots, shredded mozz and ranch dressing.

Teriyaki Veggies with Noodles, and Cauliflower Fried Rice


 

  This was a super quick and easy dinner. I diced up a chicken breast and coated it in minced garlic, sriracha and soy sauce and cooked in a skillet until done. I removed the chicken to a separate plate. In the same skillet, I followed the directions on this veggie kit, making sure to scrape up all the chicken bits while cooking.

  I microwaved a bag of steamable cauliflower rice, then added it to a pot to help cook out any remaining moisture. While it was cooking I added in some frozen edamame, minced garlic, ginger, sesame oil, soy sauce, and a chopped red bell pepper. When the veggies were cooked I added in the chicken and made a little well in the middle of the rice....and added an egg that I scrambled in the center. When that was cooked I mixed everything together.

  I love veggie filled dinners :)
