Saucy Potsticker Rice Bowls

This is a mish mash of all the TikTok recipes for this dish using what I had lying around basically. I really liked it but it's not my fav recipe ever but it was good and I'd make it again. The boys all said they liked it too so that's good. Plus it was fast!

Ingredients:
- half of a big bag of frozen potstickers (or 1 small bag)
- 1 can coconut milk
- 1 tbs tomato paste
- 1/4 cup maybe of Lawry's Teriyaki with Pineapple Juice Marinade (or just soy sauce or soyaki)
- 2 tbs red curry paste
- 1 tsp sesame oil
- leftover shredded carrots (cabbage would be good too)
- 1 tbs jarlic
- 1 squeeze of refrigerated tube ginger
- 1 bag steamable frozen broccoli
- 2 tsp rice wine vinegar
- chili crisp
- 1 cup rice
- green onions
- cilantro


Directions:
1) Make rice as directed
2) heat sesame oil in pan, sauté carrots for a bit until soft, then add jarlic & ginger
3) add coconut milk, tomato paste, teriyaki, curry paste, rice wine vinegar and stir
4) add potstickers
5) cook for 10-15 minutes covered
6) While everything is cooking, heat broccoli in microwave
7) Plate!

Cheesecake Brookie Cups


    Ingredients:
- 1 roll of cookie dough
- 1 box of brownie mix (and the eggs etc needed on box)
- 1 tub of already made cheesecake

This was based off a few Tiktok's I saw, it's delicious!

Preheat oven to 350.

 Spray a regular sized muffin tin with baking spray. Slice the cookie dough roll into 12 slices. Lightly squish the cookie dough into the bottom of the muffin tin. Make brownie mix according to directions and dollop the mix into each muffin tin....hole? I feel like that's the wrong word. Then dollop a spoonful of cheesecake mix over the brownie/cookie mix. I think I used about 1/3 of the cheesecake tub. Grab a knife or toothpick and swirl the cheesecake and brownie mix together, it doesn't have to be perfect at all.

I baked it for 30 minutes but I was worried it wouldn't be done because there really wasn't a way to check, so I did 10 more minutes. It was perfect! My oldest and I loved it, my husband said they were fine and my youngest wouldn't try them. I'd definitely make them again though!

Grilled Tacos with Street Corn & Cilantro Lime Rice

   This was really easy and it was pretty good. It was inspired by a few random quick dinner TikTok videos. I needed to use less beans in the tacos so more meat and cheese could fit. The dipping sauce was useless and bland we we didn't dip. Maybe if it had time to sit or something it would be better. The corn is a frozen street corn mix from Target, and the rice was a cilantro lime rice that was microwaveable. But it's pretty low calorie, high protein and fiber.

Ingredients:
- 1 lb ground beef
- 1 can fat free refried beans
- 1 jalapeno chopped
- 1 onion chopped
- shredded cheddar
- zero carb street taco tortillas

- 1 bag frozen street corn
- 1 packet microwaveable cilantro lime rice
- dipping "sauce" was beef broth, sriracha and garlic

   Brown ground beef then add 2 tbs taco seasoning and 1/3 cup water. Sauté the jalapeno to soften. Mix refried beans with some sour cream, garlic, cumin, chili powder and hot sauce. Spread some refried bean mixture on street corn size tortilla, then top with some ground beef, onions, hot sauce, cheese and jalapenos. Toast on a heated skillet.

Easy 15 Minute "Grilled" Chicken & Veggies

This was super easy, quick and very flavorful.

Ingredients:
- Chicken thighs
- Garlic powder, salt, pepper, smoked paprika, chili powder
- 2 bell peppers slices
- 1 onion chopped thickly
- Worcestershire

 Nothing was measured, I just winged it. Heat cast iron skillet with a little olive oil. Sprinkle the seasonings generously over the chicken thighs front and back. Cook chicken in cast iron skillet with worcestershire. Remove chicken when cooked then cook veggies in a splash more worcestershire until they start to have blackened marks but still are a little firm.

  I served it with instant mashed potatoes and frozen zucchini fries. Delicious and it will definitely go in our rotation. I thought it was cute that the bell pepper was also pregnant :)

Sheet Pan Pork Chops


  This was pretty good, even though I'm not a huge pork fan. A little salty because of the stuffing mix and ranch dressing packet but I would definintely try it again. My son was gone so he wasn't able to try it, and my husband said it was "ok". But it was super easy so that's a win.

Garlic Butter Chicken Pasta with Basil


   I was trying to use up some chicken thighs we had and no one wanted the boring chicken, side dish veggie that I do a lot. I found this video on Tiktok and pretty much followed it.

   I cooked the pasta the same but used rigatoni since that's what we had. While the rigatoni was cooking I chopped up 3 chicken thighs and tossed it in garlic powder/salt/pepper/Italian seasoning. I cooked it in a skillet in some olive oil until done. Then I removed the chicken and cooked 1/2 a big white onion in the same skillet, then I added some jarlic and red pepper near the end of the onion being done. I tossed in a stick of butter (such a healthy recipe) until that melted then 1 cup of the reserved pasta water and added everything together (with a handful of chopped basil from the garden) until it thickened. 

   I didn't have any fresh parm to grate over it so I just used a big handful of shredded mozzarella. Once that was melted I plated it and added some more red pepper, canned parm and a few more bits of chopped basil.

Yummy and easy.

High Fiber Gnocchi Skillet

     Delicious! I used ground chicken because I wanted to make it lighter, but of course it would be tastier with beef. I didn't even know that you could buy cauliflower gnocchi! Next time I'll make a veggie side, but this was kinda spur of the moment. I also used mozzarella because we already have a huge bag from making homemade pizza, I added an onion while cooking the meat, and I seasoned the meat with garlic and Italian seasoning. Definitely in our rotation!

Chicken Wontons in Spicy Chili Sauce

   This was AMAZING. So good. Definitely going in our rotation. It's super fast and super easy. The only changes that I did was I only used 8oz of white mushrooms and I added a bag of "super blends" (cabbage, broccoli etc) in the last minute of cooking time. I also added a squeeze of tubed minced ginger just because we already had it. It would of been amazing if I made it as written, I just wanted to add a little more veggies and stretch it a little more.

Greek Yogurt Hotsauce Chicken with Potato Cauli Mash

  The potato cauliflower mash was delicious, like always. 

  The chicken had a really good flavor, but the panko crumbs on top ended up just being mush...so next time I'd leave it out. 

  I served it with some spring mix, shredded carrots, shredded mozz and ranch dressing.
