Healthier Nachos

   I just cooked up some ground turkey with taco seasoning, and added pinto beans seasoned with garlic with pepper and chipotle. There was also sour cream, cilantro, pickled jalapenos, onions, shredded cheese, queso, salsa and chips of course. 

   For lower calorie swaps I used on my plate Quest protein chips and greek yogurt instead of tortilla chips and sour cream. I also switched my shredded cheddar for the reduced fat version. Yum!

Sheet Pan Nachos

  I started a new job! I haven't had a real job in 14 years, I've been a stay at home mom. I did work during the summers for my husbands company for a few hours a day, but I actually had to apply, interview and get this job lol. I love it so far (but it's only day 2 haha). I feel like it's absolutely what I needed. 

  So an easy dinner tonight. I cooked up some ground beef with pinto beans and taco seasoning. Then I layered tortilla chips, ground beef mixture, jarred queso and a sprinkling of leftover chimichurri taco meat. I cooked it at 400 for 6 minutes. 

  I topped it with homemade pico de gallo, sour cream, homemade guacamole and hot sauce.

6 Point Nachos

So this isn't really a recipe, I made a nacho bar for the family and everyone got to put on their own toppings and I didn't measure out any of the zero point foods for myself.

Nacho Bar:

- 12 Tostito's Scoops Multigrain Chips. 4 points. 
- 2 tbs store bought Salsa con Queso. 2 points.
- 1/4 cup fat free cheddar cheese. 0 points.

Zero Point Toppings:

- Rotisserie chicken breast
- Black beans
- Fat free refried beans
- Corn
- Pickled jalapenos
- Salsa
- Cilantro
- Hot sauce
- Greek yogurt
- Squeeze of lime

You can make your nachos on a baking sheet and pop it in the oven at 400 for 6 minutes to make sure everything is nice and melty and hot. The chips wont get soggy this way. Dont add cold toppings (like greek yogurt and salsa) until you take out the nachos from the oven.
