Caramel Cold Brew at home 0 points


  I've never made cold brew at home and now I'm in love, it's very smooth and a nice change from my usual hot coffee. The box says to brew it overnight or 8-12 hours, but I forgot about it and it brewed like 16 hours. Oops. I didn't water it down any extra and it doesn't taste too strong. 

  I drizzled the inside of my cup with this sugar free caramel syrup, which is not as WW friendly as I thought it would be, so I don't think I'll be buying it again. I estimated I used like a half tbs of syrup, and just that little bit is 1 point! Now that I think of it I might just save it for the kids since that little amount really isn't doing anything. I had taken a picture before I stirred my coffee and you could see the caramel swirl, but I forgot to put the caramel syrup bottle in the picture lol. 

  As for the Torani syrup, I just poured in a glug. It's zero points anyway. I also didn't count the almond milk since is 1 point per cup, and I didn't use that much.

 So this soup doesn't look very pretty, but it tastes great. The cinnamon sounds like a weird addition, but it adds just a touch of warmth. 

The only thing I changed was that I added a zucchini that I needed to use up, and I ended up not using the nori sheet. I tried one bowl of soup with the nori, and I didn't like it. I felt like the fishy taste didn't mix well with the rest of the flavors. But it is super healthy, so I ate it that way anyway lol. I love making soups because then I always have lunch ready to go.

My 11 year old really like it too, which kind of shocked me because he usually only tolerates veggie heavy meals. Made me super happy though :)

0 Point Cauliflower Rice Taco Bowl


 0 Point Taco Bowl

All ingredients are zero points on the Purple Plan.

- 1 bag frozen riced cauliflower

- 4 frozen Tyson fajita strips

- 1/3 cup pinto beans

- 1/4 cup fat free cheddar

- 1 tbs taco seasoning

- Salsa

- Non fat greek yogurt as a sour cream substitute. 

- Hot sauce of choice. I used Taco Bell Fire Sauce for this bowl.


Directions:

Heat the chicken tenders in the air fryer at 400 for 6 minutes. Head the riced cauliflower in microwave according to the directions on the bag. Combine everything into a bowl and toss with taco seasoning. 


Super easy to make, all ingredients can be kept on had and it's also very customizable! Add in lettuce, switch to black beans, make it vegan with chickpeas instead of chicken, add some diced green chilis or roasted corn. Yum!

0 Point Edamame Teriyaki Peanut Noodles

 

- 1 box Edamame Spaghetti

- 1 package frozen kale

- A few Tyson frozen chicken pieces. I only had fajita on hand and even though that doesn't sound like it would be good with the Asian flavors, it was still delicious.

For the sauce (this makes 1 serving if you like it a little extra saucy):

- 2 tbs sugar free teriyaki sauce. I use the G Hughes brand because it's easy to find around here, I get it at Walmart or Meijer

- 1/2 - 1 tbs Sriracha. I like it spicy, but you might need to use less.

- 2 tsp PB2

- 1 tsp Truvia brown sugar blend

- 1 tsp garlic powder

A few spritzes of I Can't Believe It's Not Butter spray

Extras you can add on:

Chopped peanuts, hemp seeds, grated carrots and cucumbers, chopped nori.


Directions:

1) Cook noodles as directed on package. In the last 2 or 3 minutes, dump in the package of frozen kale. Drain.

2) While noodles are cooking combine all sauce ingredients in a small bowl.

3) Combine sauce with about 2 cups of noodles. Store the rest for leftovers for the next few days :)


I also like to throw in any sort of leftover veggies I have on hand. In the picture below I tossed in leftover roasted carrots and broccoli.

Zero Point Vegetarian Tuscan Soup


Vegetarian Tuscan Soup
0 Points on Blue

Ingredients:

- 1 medium zucchini, chopped.
- 1 pound baby carrots, chopped.
- 2 ribs celery, chopped.
- 1 medium onion, chopped.
- 5 garlic cloves, chopped.
- 12 oz bag of frozen green beans.
- 12 oz bag of frozen chopped kale.
- 1 15 oz can of chickpeas.
- 1 15 oz can of cannellini beans.
- 1 28 oz can of no salt added diced tomatoes.
- 64 oz of vegetable stock.
- 1/2 cup sun dried tomatoes. Drain as much oil as possible or buy it without oil.
- Salt and pepper to taste.
- 1 tsp crushed red pepper flakes.
- 2 tbs of Chef Paul Magic Seasoning Blend, Pizza & Pasta. Or just use regular Italian Seasoning. We just really like the flavor of the Chef Paul seasoning.

Directions:

1) Either throw everything in the slow cooker on low for 8 hours or cook on the stove top. If you cook on the stove top bring everything to a boil, then reduce to a simmer for at least 30 minutes.

Zero Point Taco Soup and 2 Point Quesadilla.




  Zero Point Taco Soup and 2 Point Quesadilla

  So this was one of the first recipes that I made when I started Weight Watchers, and that's why it says 4 points.....I miscalculated. Oops.

Taco Soup:

- 1 can garbanzo beans/chickpeas drained and rinsed.
- 1 can corn drained and rinsed.
- 1 can pinto beans drained and rinsed.
- 1 can black beans drained and rinsed.
- 1 can Rotel undrained.
- 1 4 oz can green chilis.
- 1 onion chopped.
- 15 oz bottle of salsa.
- 2 frozen chicken breasts or 2 cups shredded chicken.
- 8 cups chicken broth. I like to use Better Then Boullion Chicken Base.
- 1 tbs each of cumin, chili powder, garlic powder, onion powder.
- 1 tsp each salt and pepper.
- A few dashes of hot sauce.

Combine in slow cooker and cook 8 hours on low or 6 hours on high. Zero points on blue. Some optional toppings could be: cilantro, fat free greek yogurt, 1/4 cup fat free cheddar cheese.

Quesadilla:

- 1 Ole Extreme Wellness High Fiber Low Carb Wrap.
- 1 slice of Velveeta cheese.
- 1/4 cup Kraft fat free cheddar cheese.

Either microwave it or cook on the skillet with a little bit of I Can't Believe It's not Butter spray.

Felicia Combo

  I have this combo almost daily. It's super fast and filling and delicious. The recipe actually calls for turkey bacon, but I always forget to buy it. So without the bacon it's 3 points on the blue plan.

Ingredients:

- 1.5 cups Ore Ida hash browns
- 2 eggs
- 1/3 cup cottage cheese
- Optional ingredients that I add are pepper, Frank's Hot Sauce, garlic powder, salsa. I also add turmeric for the health benefits, it does turn everything yellow though :)

Directions:

  Heat a non stick skillet over medium high heat and cook frozen hash browns. I just warm them up and don't crisp them really. Then I made 2 over easy eggs, Felicia's video will show you how. You could put everything separate on a plate, but I just like to mix it all together. Yum!
