Beef Stew with Potatoes

This was so good! I basically followed the recipe by Pioneer Woman. I didn't have any turnips or parsley, and I used baby carrots since I had so much. I also just made instant mashed potatoes because I have a 3 month old and can barely cook lol. I also added a can of golden mushroom soup since I had it. We all loved it.

Burgers with Air Fried Potatoes

This was just a last minute "what do we have" meal. The burgers are just Walmart brand frozen patties that I cooked with Worchestershire and a salt/pepper/garlic blend. I had a bag of yellow potatoes I had to use up so I was going to make fries, but I just made this air fryer recipe instead. My son also had a cut up Cara Cara orange because they are amazingly delicious!

The burgers were just topped with the normal toppings, and I added those Frank's Hot Pickle's that I talked about on the smash burger taco post.  No one liked those pickles so they took them off lol.

Easy dinner that's always yummy!

My husband picked up these comically large burgers from Kroger for dinner, that I just cooked on the skillet. They were already seasoned, and I didn't realize that 2 of them had bleu cheese folded in. I'm not a picky eater in the slightest, there's only a few things that I've tried that I really don't like. Bleu cheese is one of them, blech. The fries were good though. I just cut potatoes into wedges, and tossed them with oil, salt, pepper, garlic, and a smidge of cayenne. I baked them at 400 for 15 minutes, stirred then cooked them for 15 minutes more. After they cooked I sprayed some fake butter on and tossed them in parm.

Rotisserie Chicken Baked Potatoes with Parmesan Broccoli

   I had leftover rotisserie chicken from the protein caesar salad, so I used it up on this recipe. I baked potatoes in the oven at 400 for like an hour, then topped them with butter, salt/pepper/garlic, shredded cheddar, bacon bits, chicken and sour cream.

   To make my version lighter I used light butter, light sour cream, and queso along with the chicken, salt/pepper/garlic. The broccoli is just microwaveable steamed broccoli that I tossed in spray butter with salt/pepper/garlic and parmesan.

Chili on a Baked Potato

   This was just a quick clean out the pantry what do we have to make dinner meal. It's supposed to be chili but I think it's more like soup lol. Oh well it's still good. I served it on a baked potato with shredded cheese, sour cream and onions. Delicious!

   The "chili" was just pinto beans, chickpeas, canned lentils, frozen corn, frozen bell pepper, rotel, tomato sauce, chili seasonings (chili powder, cumin, salt, pepper, garlic and maybe something else), Frank's red hot sauce, veggie broth, and an onion. I think that was it. I just put it in the instant pot for 12 minutes and microwaved the potatoes.

   This was good but there was a few issues. First, the recipe for the pork chops were for thick bone in pork chops. I ordered them for grocery pickup, but they substituted with the thin boneless pork chops. So I followed the recipe as close as possible and used a meat thermometer....but they were still kinda over cooked. I've never been able to make a juicy thin cut pork chop. The honey mustard sauce was excellent though!

  The second issue I ran into was the potatoes. I was making "Crispy Smashed Potatoes in the Air Fryer". Where you boil them, then mush them down with a cup/bowl/fork whatever, then air fry. Every potato I smashed just fell apart. I tried lightly smashing and smashing more forceful, they all fell apart. So I ended up just adding some butter, garlic, salt, pepper and milk and mashing them. They tasted good but my son really wanted to try the air fryer version.

  I can't even think of the word potatoes without thinking of Sam.





  The third issue really isn't an issue, but personal taste. The salad was just a Taylor Farms Mediterranean Salad Kit. I try to like these flavors, I really do. But I really don't like feta cheese. I WISH I did, because it's higher protein and lower calorie. It was on sale so I thought we'd get it, but I don't think we'd get it again. I do love Taylor Farms salad kits though!

Greek Yogurt Hotsauce Chicken with Potato Cauli Mash

  The potato cauliflower mash was delicious, like always. 

  The chicken had a really good flavor, but the panko crumbs on top ended up just being mush...so next time I'd leave it out. 

  I served it with some spring mix, shredded carrots, shredded mozz and ranch dressing.
