Low Calorie BLT Chicken Salad

This was just a quick lunch idea that I just randomly threw together, ingredients are approximated. It was really good and I love having something that I can throw on some bread for lunches.

- 1 container already shredded rotisserie chicken
- 2 stalks celery, chopped
- 1/4 red onion
- 1 container cherry tomatoes
- 1 box already cooked bacon
- 1/2 cup nonfat greek yogurt
- 1/2ish cup non fat mayo
- salt, pepper, dill
- I also added low sugar craisins to mine, but I didn't mix it in because no one else wanted them in theirs

Bread Machine Garlic Herb Pepperoni Bread

This was super good but you can't even taste the pepperoni for some reason lol. It just tastes like delicious garlic bread. I'd definitely make it again except I'd just leave out the pepperoni next time to see if it really did make a difference. I used the oven baking method and got 2 loaves out of it. So far we've just eaten it with butter, and made toast....but I bet it would be amazing as a grilled cheese!

Slow Cooker French Dips

Ingredients:
- 2ish lbs chuck roast
- 1 can beef consomme + can filled with water twice
- 1 packet au jus
- 2 onions
- garlic
- salt, pepper, sage leaf
- provolone
- hoagies

Super easy recipe and always delicious. Heat EVOO in pan and rub salt and pepper on chuck roast and sear in cast iron skillet until brown on all sides. Remove meat and put in slow cooker, then cook onions and garlic in the cast iron skillet and scrape up all the brown bits. Transfer to slow cooker and sprinkle the au jus over top. Pour on beef consomme and fill up the can twice with water, add a sage leaf and cook on low for 8 hours. Toast hoagies with provolone then done.

I make a sausage/bell pepper/onion hoagie sandwich a lot, and this reminded me of it....but better! I really liked it but next time I'll cut the steak into bite sized pieces instead of strips. I also slightly overcooked the steak but I wanted to make sure there was no pink since I wasn't sure if cubed steak was more related to ground beef or...steak. Ever since our food poisoning incident from medium Red Robin burgers, we make sure ground beef has zero pink.

 Everyone loved this! Besides halving the recipe, the only thing I did differently was we added "cowboy butter" seasoning to the meat. Served with frozen waffle fries. I made half the amount because for 2lbs of cubed steak it was $20, which was insane. But halving the recipe was perfect, it made enough for dinner plus at least 1 night of leftovers, maybe even 2.

The guys were here finishing up the flooring today and I wasn't sure how late they'd be here. So I got some Dave's Killer Bread that I toasted and I spread some garden veggie cream cheese, & topped with: arugula, pepperoncini, tomatoes & cucumber from the garden, avocados and red onion. We had some bacon too that would have been yummy.

I also air fried some of these garlic fries from Kinders, they are super good

HelloFresh Cheddar Grilled Cheese & Creamy Tomato Soup

Grilled cheese & tomato soup is one of my fav meals, but I wouldn't normally get it from Hello Fresh since it's so simple to make at home. But it was offered for like $5 as an add-on, not as one of the dinner options. I figured $5 for a quick lunch is great.

But this is incredible. It's the best grilled cheese & tomato soup I've ever had. The herb butter really makes it, and they actually gave slices of Sargento cheese. Sourdough is always the best for grilled cheese, and the soup was thick and flavorful. I would definitely get this every time I see it if it is like $6 and under lol. Maybe $7.

These were pretty good, but the boys said they prefer the Hawaiian roll sliders so I'll probably just make them next time. It was interesting trying the pretzel buns but they didn't have too much flavor so I probably wouldn't make them again. Nothing wrong with the recipe, but you just can't beat Hawaiian rolls. Although I liked the honey mustard!

Philly Cheesesteak Sloppy Joes

I'm not a huge sloppy joe fan, but I do love Philly cheesesteaks! I came across this recipe while looking for low glycemic recipes. I had failed my 1 hour glucose test at 24 weeks pregnant, so I was worried I might have gestational diabetes. I passed the 3 hours though woohoo! But before I took the 3 hour test I was researching gestational diabetes and meal planned for the week as if I had it so I could try it out. It's really not that different then what I was eating before honestly. Except no more sweet treats which I've been indulging in way to much this pregnancy.

I liked how easy this was, but it was kinda bland. The most annoying part was chopping, but I have one of those choppers that empty into a bowl so that's quick. I also used ground beef instead of turkey because that's what I had, and I toasted the provolone on the bun instead of  mixing it into the sloppy joe mixture. I also added garlic because yum. If I make this again I'd put it on a hoagie roll instead of a bun so it didn't fall out. 

I actually made mine quesadilla style on a low carb tortilla. My sons plate had an extra turkey sandwich because we have a bunch of turkey to use up that my husband smoked and he's a teenager so he's always hungry.

The broccoli was just bagged broccoli that after I steamed I mixed with some queso, Frank's hot sauce, a dash of cayenne, a bit of garlic powder and smoked paprika.

Sausage, Pepper and Onion Hoagies

    I make this recipe several times a year, it's super easy and always a hit. I just sauté an onion, 2 or 3 bell peppers and 1 package of some type of smoked sausage kielbasa thing in some EVOO. I season with salt, pepper, garlic, Italian seasoning and a little bit of red pepper. Then I toast the hoagies with some provolone and dinner is ready!

BLT's with Homegrown Tomatoes

  My husband grew tomatoes this year, and of course they super multiplied and we have tooons of tomatoes. I grew tomatoes 2 years ago and got 1 tiny cherry tomato. Oh well, he's been tending the garden so I like that I get the reward without the work lol. We had BLT's tonight to try and use some up. They had tomatoes, bacon, lettuce, pepperoncini, mayo, onions, dijon, pepper, and cheddar. So more then a BLT but they were amazing!

  We usually make these sliders for holidays, they are so good. But it's spring break and I thought it would be a great snack to have on hand for my teenager so I don't have to cook so much lol. 

  I paired it with this chicken salad which was AMAZING because that ranch is so incredibly flavorful. I would use a little less milk though since the ranch was a little runny. For the chicken I had some chicken breasts that I just threw a bunch of seasonings on and air fried. Definitely double this recipe because it doesn't make to much.

Hot Chicken Sandwiches with Air Fried Zucchini

  I really hate that I messed up the English muffins....as you can see each sandwich has either two tops or two bottoms. Sigh. 

  These were so good and so low calorie. The recipe calls for chicken thighs, but the stores have been out of chicken for weeks now....I was lucky to snag some breasts the other day though. So I pounded a chicken breast thin, coated it with seasoning and air fried it at 380 for around 15 minutes. The slaw is just a mixture of coleslaw mix, Bolthouse Ranch and a drizzle of Mikes Hot Honey. That bottle of hot honey was $8 freaking dollars, I should of just mixed up some honey and red pepper flakes. Oh well. Then the sauce is a mixture of low fat mayo, pickle juice and Frank's hot sauce. The recipe calls for Truff's hot sauce.....but that is like $17 a bottle! Eep. 

  I also air fried 2 zucchini's with the same seasoning that I used on the chicken because it was already out and I was to lazy to decide on a new seasoning combo. 

  Delicious and I'll be making these again.

4 Point Breakfast Sandwhich


                                  4 Point Breakfast Sandwich

Using two eggs adds the extra protein to help keep you full for hours.

Ingredients:

- 1 Light English Muffin. 2 points.
- 1 slice of Velveeta. 1 point.
- 1 slice of Canadian Bacon. 1 point.
- 2 eggs. 0 points.
- Squirt of mustard. 0 points.

1) Toast your english muffin.
2) Fry up 2 eggs in a nonstick skillet, or spray with Pam.
3) Fry up canadian bacon.
4) Assemble and eat!
