Smoked Salmon Chowder with Homemade Garlic Bread

  This was AMAZING. We loved it so much, I'll definitely be making it again. I just wish it had a bit more salmon flavor, it was pretty light. But I spent $12 on 8oz of smoked salmon so that's expensive enough. But it did last us for two dinners for 3 of us, and two lunches for me. 


  I made some garlic bread in the bread machine, but it took 2 tries lol. I should of checked how it looked but I didn't, so it's my fault. The first loaf did not have enough water so it was a mess. The second loaf was perfect. I don't know how to make the loaf a uniform color all over, but it tasted great.

Healthy Instant Pot Chicken Tikka Masala with Turmeric Rice

    Indian food as been sounding so good lately, but I need something quick to make after work. This was amazing! There was a little too much sauce even though I followed the directions, so I'm going to look up any sort of ideas for the sauce....I'd hate to toss it.  I wanted to make turmeric rice with it instead of the brown rice like what the recipe called for. I used to make "Golden Rice Bowls" for my son when he was little and he loved it, so I thought I'd make it again. He said doesn't remember them lol. Oh well. Definitely going in our rotation!

Spicy Orecciette with Chicken Sausage and Kale

   This was really good, I'd definitely make it again. The only change I made was that I threw in a handful of cherry tomatoes I had to use up, and I could only find a sundried tomato basil chicken sausage. Oh yeah, and I used rotini because you can't find orecciette anywhere around here. I love that it was an easy quick dinner to make after work and you can throw in a ton of veggies.

Pickle Shake and Bake Chicken with Dill Pickle Salad and a Baked Potato

Easy, delicious weeknight dinner. I marinated the chicken in pickle juice with ranch, dill and garlic. Then cooked with shake and bake seasoning. The salad is the dill pickle salad kit by Taylor Farms (one of my favs!) and a baked potato with butter, cheese, Kinders seasoning and sour cream.
