Parmesan Garlic Chicken with Tortellini and Veggies


This was so good! I did do it a little differently because I was just cooking it on the stove and in the oven, rather then on a griddle like the recipe called for. I made the tortellini using the instructions on the package, and I cooked the veggies in the cast iron skillet after removing the chicken for all that extra flavor. Then I mixed the veggies & tortellini, and instead of Italian vinaigrette, I used some of the Buffalo Wild Wings Parmesan Garlic sauce.

For the chicken I butterflied it then I sprinkled it with salt and pepper. The breadcrumb coating was a mixture of Texas Toast croutons, panko, and grated parmesan. I then browned it on both sides, added a slice of mozzarella and put it in a 400 degree oven for like 6 minutes. The chicken was thin so it was done early. I had forgotten to put the BWW sauce on before the breadcrumbs, so I just drizzled some on before I put it in the oven.

It was delicious, and my son loved it so much he pretty much ate all the chicken himself lol. My husband had a serving, he was it was okay. Like always lol. My son also ate most of the veggies the day after to!

This was so good! My son and I loved it, my husband just said it was okay....but he's not a big fan of gnocchi. Weirdo :P It was super fast and fresh tasting, I'd definitely make it again.

Sheet Pan Tacos


These look like a mess but they were tasty. I didn't warm the tortillas quite enough before I filled them because some of them split, but they stuck together fine after cooking. I did make 2 changes to the recipe, I used lean ground beef and instead of rotel I used some of my husbands homemade smoked salsa. They were really good and my son loved them, and his friends came over the next day and had some too. My husband wasn't hungry so he didn't try them. I'd make them again for sure!

I really liked these, the smokey mustard was really good and caramelized onions are one of my favs. It really could of used some type of cheese though, I didn't even think to put any on since it didn't call for it. I was on auto pilot cooking dinner lol. Fries were good too. My son said this was the best burger he ever had which was surprising since he's had In in Out Burger before :P

Chicken and White Bean Curry

It doesn't look too pretty but it's delicious! I used this recipe from Kitchen Sanctuary as a guideline, I just used what I already had. It definitely would of been even better with some cilantro for that pop of freshness. I didn't have any spinach so I added a can of rinsed white beans for some more fiber. I also tossed the chicken in some garam masala and curry powder before cooking, and I only had tomato sauce instead of chopped tomatoes. I was fine with that because I knew it would just be a bit saucier. I served it over basmati rice, my son loved it. I love it but my husband didn't have any.

I made the recipe exactly as written, but instead of making the biscuit topping I used a box of Red Lobster cheddar bay biscuits. I liked it, my son loved it and my husband didn't care for it. He said it was too mushroomy. Next time I would halve the amount of mushrooms and add more veggies. But I would make it again!

Tuna Noodle Casserole

This is delicious, filling and warm, perfect for these freezing January temperatures! I like that it's from scratch, no "cream of" soups, it really really tastes better that way. The only change I made was that I added garlic, because garlic makes everything better. We all loved it. Served with green beans!

Cheesecake Brookie Cups


    Ingredients:
- 1 roll of cookie dough
- 1 box of brownie mix (and the eggs etc needed on box)
- 1 tub of already made cheesecake

This was based off a few Tiktok's I saw, it's delicious!

Preheat oven to 350.

 Spray a regular sized muffin tin with baking spray. Slice the cookie dough roll into 12 slices. Lightly squish the cookie dough into the bottom of the muffin tin. Make brownie mix according to directions and dollop the mix into each muffin tin....hole? I feel like that's the wrong word. Then dollop a spoonful of cheesecake mix over the brownie/cookie mix. I think I used about 1/3 of the cheesecake tub. Grab a knife or toothpick and swirl the cheesecake and brownie mix together, it doesn't have to be perfect at all.

I baked it for 30 minutes but I was worried it wouldn't be done because there really wasn't a way to check, so I did 10 more minutes. It was perfect! My oldest and I loved it, my husband said they were fine and my youngest wouldn't try them. I'd definitely make them again though!

Swedish Meatballs with Roasted Broccoli

I've never tried Swedish meatballs but I've always wanted to! They reminded me off beef stroganoff, we really liked them. I wish it made a bit more sauce, or I accidentally reduced it too much maybe. It's fine for dinner but leftovers are gonna be a challenge lol. Maybe I'll serve the meatballs and toss the egg noodles in butter, parm and garlic or something. Both boys loved it so it made me happy. My husband even said thumbs up, which is nice. 

I did add the full 2lbs of meat, so I upped the breadcrumbs to a 1/2 cup and I used 2 eggs. They had so much flavor! I also used regular breakfast sausage, since Walmart has been out of ground pork every single time I've tried to buy it. I Googled it and it said breakfast sausage was a good substitute. Oh I did add a dash of garlic powder to the sauce because I really wanted my husband to like it and he likes garlic lol. 

The broccoli was just tossed in EVOO, salt/pepper/garlic/smoked paprika and air fried at 400 for about 15 minutes.

Lime Shrimp Dragon Noodles

This is honestly one of the best things I've ever eaten. Literally incredible. The only change I made to the recipe was I added a spoonful of peanut butter and topped it with chili crisp. In fact it's so good that I'm going to the store tomorrow to get the ingredients to make it again. All I need is another lime and another bag of shrimp. There is leftover cilantro and green onions and I have ramen packs in the pantry already.

 Ethan loves it too. We never eat shrimp because Craig's allergic but he's out of town so that's when we make shrimp recipes since I love them.

  If you ask my teenage son what he wants for dinner, he'll choose this chicken and rice. It's super quick and very good. I tend to make it like once a month because he loves it so much, I love when he loves my cooking. The salad was just an apple spice salad kit from Kroger which I love, in fact I need to stock up until they are out until next year!

Chicken Ravioli with Pesto and Veggies

   This was really good! The only thing I did differently was I added red pepper, and I accidentally used the whole jar of pesto, I wasn't even thinking and I just dumped it in lol. Next time I'd add more tomatoes though. This is definitely rotation worthy! I liked how quick it was too.

One Pot Chicken and Rice

 I forgot to take a picture, but I wanted to post this so I can remember for next time.

This was pretty good, it did need a smidge more salt and maybe a dash of cayenne for some depth. Other then that it was a great clean out the pantry meal! This ended up being one of my teenagers favorite meals, I was surprised lol.

If I wanted to up the veggies you could put in a handful of spinach after cooking, stirring until the spinach wilts. Or add of side of broccoli/green beans with S&P and lemon.

  This was delicious, but I added some cajun seasoning and it ended up too salty tasting even though I didn't add any additional salt. Oh well, next time I'll just add a bit less cajun seasoning.
