Sheet Pan Pesto Salmon with Potatoes & Broccoli

This was kinda planned and kind of a mish mash of what we had. I knew I wanted to make pesto salmon & potatoes, and I had planned to use up a bag of green beans I had. But I remembered I had like half a bag of broccoli to use, so I used that up instead of the green beans before it went bad. Everything is really good, it's a super quick meal and some variation of it is always part of our rotation. My sons plate also had garlic bread because he's a bottomless pit!  Pesto always reminds me of my grandma since she'd make homemade pesto all the time. Her version was waaaay less oily though, it was so much better!

I basically used this recipe for the salmon and potatoes. For the broccoli I just quickly tossed it with EVOO, salt/pepper/garlic since it was last minute.

Creamy Parmesan Tortellini with Nashville Hot Salad

Super quick and easy meal. It's just 1 bag of family sized refrigerated tortellini with a jar of creamy pesto sauce. After I cooked the tortellini I did sauté some jarlic in the same pot and once I added in the pesto sauce I added a squirt of tube basil and a bunch of black pepper. Then I topped it with red pepper flakes and shredded parmesan. Now that I'm typing this I remembered that I have some spinach in the fridge I could have tossed in.

The salad kit is just the "Nashville Hot" kit from Walmart, I love it...it's delicious. Very quick dinner!

One Pot Creamy Pesto Chicken Pasta

     Okay it's not a pretty picture but it's delicious! I used to make a pesto chicken dish similar years ago that everyone loved. It was basically cooked diced chicken with cooked pasta, tossed with a jar of pesto and sour cream with a few seasonings. I don't remember the exact ratios but I'm sure I saved it somewhere. We also had a side of green beans that I forgot to grab a picture of. 

    I loved this, my son loved this. My husband said "I don't like the spinach" We can add a little splash of veggies in this heavy dish lol. Next time I'll use broccoli which will be even better.

Chicken Ravioli with Pesto and Veggies

   This was really good! The only thing I did differently was I added red pepper, and I accidentally used the whole jar of pesto, I wasn't even thinking and I just dumped it in lol. Next time I'd add more tomatoes though. This is definitely rotation worthy! I liked how quick it was too.

Pesto Zucchini Noodles with Chicken Sausage




Pesto Zucchini Noodles with Chicken Sausage

  This was really yummy. I did make a few changes though! :)

  First I sauteed half an onion, red pepper flakes, garlic and the chopped chicken sausages in a little bit of olive oil. Then I added 3 spiralized zucchini (the store had no summer squash) straight to the pan and seasoned it with pepper, a tiny bit of salt and the whole jar of pesto. Then I stirred it and let it sit for a minute to warm up the zucchini before I took it off the heat. 

  I spiralized most of the zucchini, but I didn't know what to do with the ends so I just chopped them up. It's not as pretty as the recipe picture though lol.

  For my son and husband I made some crescent rolls, but I ate it as is and it was super filling with the sausages. I'll definitely make it again.

  I only spiralized a little bit of my finger lol.

Turkey Pesto Veggie Skillet

  So I know this isn't very appetizing looking lol, but I was just doing a quick clean out the fridge meal of veggie pesto skillet. I just now realized I forgot to add the zucchini! I knew I was forgetting something.

  I just sautéed up a pound of ground turkey, a yellow bell pepper, a bag of frozen broccoli that I air fried to get the roasted flavor, 1 cup frozen peas, 2 cups fresh spinach, garlic, Italian seasoning, red pepper flakes, parmesan and a small jar of pesto.

20 Minute Creamy Tuna Pesto Pasta


   It's not the prettiest dish, but this 20 Minute Creamy Tuna Pasta by Homemade Mastery is delicious! My favorite part is that it's all pantry staples! If you like tuna melts or really anything with tuna that you'll love this. The pesto adds so much flavor, and it's full of veggies so that makes me happy. Everyone loved it so I'll be making it again for sure.

  As a side I just steamed up some broccoli and tossed it with a little lemon juice, garlic, salt/pepper, and butter.
