Caesar Protein Chicken Veggie Pasta

 



Caesar Protein Veggie Pasta


   This is super good! 

I just used:
- 1 rotisserie chicken
- 1 bag of mini cucumbers
- 1 pint of cherry tomatoes
- 1 box Barilla protein pasta
- 1 bottle Bolthouse caesar dressing
- 1/4 red onion
- Juice of 1 lemon
- salt, pepper, garlic powder, dry dill

Not pictured:
- Chopped lettuce

I just chopped and mixed everything together. Next time for a higher protein/lower calorie option I might try half a bottle of Bolthouse with half greek yogurt and extra seasoning to make up for the loss of flavor. Bolthouse is already low calorie but more protein is always good. The lettuce I'm adding per bowl so it doesn't get soggy.

I love love love this and need this in my fridge at all times now.

Pickle Chicken with Garlic Mashed Potatoes and Veggie Curry Medley

  Whenever I finish a jar of pickles I like to use the brine to marinate chicken. These pickles were a spicy garlic flavor and it went so good with the chicken. I also added garlic, pepper, dill and onion to the marinade. I browned the chicken in a cast iron skillet for a few minutes with butter, then I transferred it to a 425 oven for 10 minutes to finish cooking. The mashed potatoes were instant of course. 

  The veggie medley is from Target and I LOVE it! I'll be keeping a stock of it in the freezer for sure.

Chipotle Beef Bowls


   Terrible picture lol, but they were delicious. I used this chipotle tinga sauce I got from Target, the flavor was so good but it was SUPER spicy. I'm not super wimpy with spice but this was very hot. I'd still buy it again. I just sauteed some sirloin tips for a few minutes then finished cooking them in the sauce.

   I served it over brown rice cooked with a little beef bullion. On the side I added this steamtable street corn along with a can of fat free refried beans I heated up with taco seasoning and 2 Laughing Cow wedges. I also topped it with salsa and mine had a drizzle of queso. I love meals like this, my husband says they are fine and my son doesn't like them mixed together. Oh well cheap and easy.

Roasted Veggies & Jalapeno Cheddar Dogs with Pepperoncini Hot Sauce

   This was a clean out the pantry meal I just kind of threw together. I had almost a whole pack of those jalapeno cheddar dogs to use up and a bunch of veggies. I chopped up 2 sweet potatoes, 3 bell peppers, 1 onion, a handful of baby carrots, and the package of cheddar dogs. Then I tossed them all in EVOO, salt, pepper, garlic, Italian seasoning and smoked paprika. I roasted them at 400 for 20 minutes, then stirred and put them back in for 10.

   I then just cooked up some white rice in chicken broth, and topped it all with this delicious pepperoncini hot sauce. I wish it came in a bigger bottle!

Healthier Nachos

   I just cooked up some ground turkey with taco seasoning, and added pinto beans seasoned with garlic with pepper and chipotle. There was also sour cream, cilantro, pickled jalapenos, onions, shredded cheese, queso, salsa and chips of course. 

   For lower calorie swaps I used on my plate Quest protein chips and greek yogurt instead of tortilla chips and sour cream. I also switched my shredded cheddar for the reduced fat version. Yum!

Italian Chicken Sausage Alfredo with Roasted Broccoli

    This was pretty much a random clean out the pantry meal. I had some Italian flavored chicken sausage that I sliced and cooked in butter & EVOO with a chopped onion. Then I added jarlic with a squeeze of basil from a tube, and seasoned it with Italian seasoning, salt, pepper garlic and red pepper. Then I added a jar of alfredo and filled that with hot water and shook it around and added it to the pan. Then I plopped in some chicken boullion and the egg noodles and let it cook with the lid on for 10 minutes. After it was cooked I added a couple handfuls of spinach and some grated parm.

   Delicious! Everyone loved it. The broccoli is tossed in EVOO, salt, pepper garlic and air fried at 400 for 15 minutes. Then I tossed it in a little spray butter, lemon juice and canned parm.

One Pot Chicken and Rice with Salad

  If you ask my teenage son what he wants for dinner, he'll choose this chicken and rice. It's super quick and very good. I tend to make it like once a month because he loves it so much, I love when he loves my cooking. The salad was just an apple spice salad kit from Kroger which I love, in fact I need to stock up until they are out until next year!
