Creamy Salsa Chicken Skillet
I'm 9 months pregnant and we've been having all of our flooring replaced so I've hardly cooked lately. But there was no construction today and we had all the ingredients for this so I thought it was the perfect time. It's super easy, the most work is dicing the chicken. I've made this once before exactly as written, but this time I made a few changes to use up ingredients I already have. Instead of beans and corn I added a zucchini from the garden, and I used 2 cups of homemade salsa my husband smoked and made. I didn't have any queso fresco but I did have some shredded Monterey Jack cheese. The rice is also just the microwaveable cilantro lime rice pouch. The green onion is leftover from another recipe, if we didn't have any it still would have been tasty without it. The homemade salsa has so much flavor!
