Veggie Tuna Casserole
This was a clean out the pantry meal. I love Budget Bytes recipes, I've been using them for over a decade, but I did do a few things different then her recipe so I could use up ingredients.
What I did differently:
- I used a little over 1 cup milk instead of 2 cups. A lot of reviews said it was too watery so I wanted to make sure that it was'nt.
- While making the roux I added garlic, 2 tsp thyme and 1 tsp cajun seasoning.
- More veggies, I just dumped in a random amount. Frozen peas & carrots, green bell peppers, green beans and like 3 cups fresh spinach.
Yum!
